Can you cook with Almond Milk?

Unfortunately, I have given up dairy in order to see if it helps with a health problem.

I want to make my favorite Pumpkin and Sausage Soup, but it calls for heavy cream. Can I use almond milk, or would that ruin it?

I've found that almond milk generally works where cream or milk is used.

In a savory dish like soup, almond milk should work fine. Its purpose is to lighten the dish and give it some depth of flavor. It will not thicken it like dairy cream will, nor will you get the richness of mouth-feel that comes with high-fat cream.

In sweet dishes, like baking things, you can substitute as well, but again cream or milk provides more than just liquid... it can provide proteins that bind the dough together and fats that make it richer. Your almond-milk versions will not be the same because almond milk does not have the same proteins and fats. It will probably work, but they will not be the same.

I even used it to make ranch dressing last night and it was very good.
I tried to make sf pudding, it was ok but did not set up well.
I like it in mashed cauliflower, just use the unsweetend kind, not the vanilla unsweet.
