Someone here mentioned this site, so I printed off about 30 recipes. I made the onion pie this weekend and it is awesome! I've tried so many low carb recipes lately that I was just bummed at not seeming to find one that was really good. This onion pie blew me away! I'm thinking about adding bacon next time. Probably could add all kinds of ingredients and end up with a good breakfast, too. Anybody else recommend recipes from this site that just blew you away???

I agree with the onion pie...it is da bomb and yeah, definitely add some crispy bacon crumbles on top. You could add some green chilies for a little more kick or some jalepenos if you like heat. Her green chili chicken is also very good and simple to make.

Oh I love her site! I have yet to make something from there that I didn't absolutely love! Even my kids love the things I make from there!

I made the parmesan deviled chicken from her site but instead of thighs I cut chicken breasts into strips. HUGE hit with the kids. Not one single chicken strip was left.

*ETA - the pork rind pizza from her site is awesome! My kids couldn't tell the difference at all.

I love just about everything from her site. There was only one I didn't love, I think it was the italian casserole or something like that but my boyfriend loved it so there ya go.

I made the onion pie with bacon once and it was very good.



TEXAS ONION & BACON PIE
5 slices bacon, chopped
1 large onion, sliced thin, 5 1/2 ounces
8 ounces Monterey jack cheese, shredded
6 eggs
1 cup heavy cream (I only use 1/2 cup in my quiches now)
1/2 teaspoon salt
1 teaspoon chili powder

Sauté the bacon and onion until the bacon is cooked and the onion is tender and slightly caramelized. Place the cheese in a greased pie plate; top with the bacon and onions. Beat the eggs, cream and seasonings; pour over everything. Bake at 350º for 35-40 minutes until a knife inserted in the center comes out clean. Let stand 10 minutes before cutting.

Makes 6-8 servings

Per 1/6 Recipe: 393 Calories; 34g Fat; 18g Protein; 4g Carbohydrate; 1g Dietary Fiber; 3g Net Carbs
Per 1/8 Recipe: 295 Calories; 25g Fat; 14g Protein; 3g Carbohydrate; trace Dietary Fiber; 2.5g Net Carbs

I love Linda Sue's site. I have never been much of a cook. I used to cook about once every couple of months or so if even that. I live alone so it is usually easier just to go get something.

Then I discovered Linda Sue's site and found some amazing dishes that taste much better than most of the things that I would find at a restaurant. I find myself cooking once or twice a week now. My freezer is stocked with individual portion sized Linda Sue recipes. Yum!

I think her seasoning recipes are wonderful , with no sugar. They are much more flavorful than store bought. Plus everything that is induction friendly is marked with this * . Simply wonderful.

Linda, that onion pie picture ... looks like a real dough as the crust. How in the world does it make it like that?

Pony47, So far I have only tried the Oopsie Rolls and I am still completely in food heaven over them. I have had two of the best bacon turkey burgers ever! I know I will be having them at least twice a week without tiring of them! I definitely plan to try a lot more of her recipes!

I just rtealized i was wrong ... I have also tried her taco seasoning. AWESOME!!!!

It must be an optical illusion. There's nothing crust-like there. The top does get brown while baking though.

LOL .. yep .. it definitely looks like a deep pan crust. Still, I will surely be making that recipe as soon as I am able to buy more groceries. I adore onions (though my stomache hates me when I eat them) so i will have to indulge asap. You and your recipe talents .. wow .. amazing! TY so much for sharing them with us all.

Oh yeah ... going to make the split pea soup tonight. It is 98 degrees here ... but I can't wait for winter to come along to enjoy that soup. LOL
