Salted Peanut Choco Truffles
 
I made these up yesterday in a hurry to take to my Dad and stepMom's for dinner. The base idea for this recipe came from the ganache I made for the flourless chocolate torte which I made at Easter. I tweaked it up and voila - truffles!

Here is the recipe:

Char's Salted Peanut Choco Truffles

Makes 12 truffles

1/4 cup Torani or DaVinci SF Peanut Butter syrup
3/4 cup heavy whipping cream
1 to 2 tablespoons natural peanut butter
5 oz. good quality dark chocolate (at least 85% dark), chopped into small pieces
1/4 tsp. NuStevia No Carbs stevia powder blend (or to taste)


Coating

1/4 cup finely chopped roasted, salted peanuts (your everyday canned peanuts)
1/2 tsp. dark cocoa powder
1/4 tsp. NuStevia No Carbs stevia powder blend

Mix together the coating ingredients in a small bowl and set aside.

Measure the PB syrup and whipping cream into a 4 cup batter bowl or other microwave safe container - microwave 1 minute at high power, til hot. Add peanut butter and whisk til blended.

Place back in microwave and heat at High power 1 to 2 minutes, watching carefully, til mixture comes to a boil.

Remove from microwave and add chocolate and stevia to mixture - let stand 30 seconds, then whisk til chocolate is melted and smooth. (Taste at this point and add more sweetener if you think it needs it.)

Pour mixture evenly into 12 mini muffin cups which have been lightly sprayed with cooking spray. Freeze til firmed up a bit, 20 to 30 minutes.

Remove from freezer, pop from muffin cups, roll quickly into balls, then roll into coating mixture. Refrigerate til firm. Store any leftovers in the fridge.

You could also coat these in just peanuts, or just cocoa
powder, for some that look different. OR you could dip them into melted dark chocolate and let that firm up. If you do that, I'd freeze the truffle balls til solid before dipping - seems to work best for me when I dip things that way!

I don't know about using other sweeteners. Haven't tried it. Splenda + chocolate = bitter so I'd not try THAT combo at least.

Not sure of the carb count, will vary depending on the % cocoa of your dark chocolate bars.

AND one last note - if you don't have mini muffin cups, or you want smaller truffles, just refrigerate the mixture in the bowl in which it was made until it's firm, then scoop out with a teaspoon and roll into balls. I used the mini muffin cups because I was in a hurry and wanted the stuff to firm up as quickly as possible.

since i don't have Davinci Peanut Butter syrup... I sub for coconut syrup added a little chocolate PP and some coconut cream and then rolled then in unsweetened coconut that was put in the magic Bullet for a second or two.. they were very good...but i love any thing coconut ...thank you for sharing Charski

Yeah, I think these would lend themselves well to many of the DV or Torani flavors! Raspberry, Kahuli Kaffe, amaretto, almond roca, peppermint, to name but a few....

Rolled in finely chopped nuts of any kind or just cocoa powder, or powdered erythritol, or whatever - the possibilities are endless! :)

Mistyjo, your coconut/choco truffles sound excellent!

I also use the NuNaturals No Carb powder and like it very much.

It's even good in coffee....I need to go get me a chocolate and
a cuppa now.

I just had one of these truffles and a cup of coffee with half & half for breakfast, Barbo! Great minds think alike! :D

These were a big hit (again) at the dinner party we went to last night. Thankfully, after DH and I had our breakfast truffle - they're now all gone. It made 12 BIG FAT truffles (filled the 12 mini muffin cups FULL to the top, plus enough to make about 2 more truffles left over, which is in the fridge in a small container) and I really liked them rolled in the peanut flour. :yummy:

You can always leave them in the freezer and just take one out when the chocolate siren wails!

One question, Charski, is the sweetener you used still available? I've not heard of it, but then I haven't cruised through netrition is a while... These sound wonderful, peanut butter and chocolate... Life is good!
