Ranch Dressing w/gluc and no mayo
This will appeal to a very small audience, but in case anyone is anti-mayo like me, I thought this might be useful.
1 packet ranch dressing mix or 3 TB favorite dried herbs
1 cup water
1/2 cup heavy cream
1/8 tsp gluc
1/4 tsp vinegar (to replace the mayo's tanginess)
pinch of salt
Blend together until well combined. The gluc thickened it up in about 5 minutes. It made it a nice creamy consistency without using mayo. In fact, I might try using gluc, cream and vinegar to make a faux-mayo.
Before the questions begin.... Mayo is made with vegetable oil, which is high in polyunsaturated fats which are linked to all kinds of diseases. Vegetable oil is soybean, canola, safflower and corn. Good fats are the saturated type such as animal fat, cream and coconut oil. (Anyone ever make a coconut oil mayo?)
Low-Carb foods are not created equal
Enjoy- cream, butter, coconut oil, olive oil, fresh chicken, fish, beef, pork, bacon, sausage, cheese, LC veggies, berries/melon, dressings, stevia, chocolate (75% cocoa) and red wine
Avoid - Mayo, canola oil, too much protein, processed LC foods (tortillas, candy, shakes, bars) Splenda and other artificial sweeteners, corn products (xanthan gum, dextrose, maltodextrin)

I linked this over at the Glucomannon sticky, but please join the fun (add your glu recipes over at the sticky.
This sounds very good, I had been making a salad dressing with glu, but this really must be a winner.
