Just made the peanut sauce in Atkins' book... yummmmmmm...

I have been craving chicken and peanut sauce ever since reading this recipe in Dr. Atkins' New Diet Revolution. I'm sure it's been discussed a million times here, but hey, I just made it for the first time AND I AM IN LOVE!

Seriously delicious. Here is the recipe.

Mix in a bowl:
1/3 cup peanut butter (sugar free of course)
1/3 cup water
1 garlic clove, minced (I used two)
2 tablespoons lime juice
2 tablespoons soy sauce (I used low sodium)
1 packet Splenda
dash of cayenne pepper (I used more than a dash 'cause I like things spicy!)

While my chicken breast was grilling, I whipped this sauce up, and there is a lot leftover. I'm going to use the rest in a stir fry tomorrow. It's way better tasting than any of the peanut sauces I used to buy before my low carb lifestyle!

This is pretty close to the recipe I use. I use vinegar instead of lime. I have never tried it with lime, but I bet it is good. I used to eat it over pasta, with a few chopped peanuts on the top. Maybe now I will use it over zucchini pasta with chicken. Yummy stuff! I have also had it over sauteed cabbage.

This sounds like a great recipe and I bet it would be wonderful served over spiral cut daikon radish!

OK last I'll say about this wonderful peanut sauce... since I just cook for myself, the sauce was enough for four meals! Here's what I did...

Cooked a chicken breast, and used the peanut sauce for dipping.
Cooked a steak, and also used peanut sauce for dipping.
Chicken stir fry (stir fry veggies, chicken cubed, peanut sauce).
And tonight, I warmed up the rest and put it atop a filet of salmon.

Definitely use more than a dash of cayenne pepper in that recipe.

Peanut sauce is one of my favorites but I don't really have it anymore since I always paired it with noodles or rice. The cabbage is a great idea though, I never would have thought of that! I think I will make some tomorrow; saute the cabbage, add chicken, maybe a little shredded carrot, onion, what else could I put in there?

There are so many vinegars, which kind did you use?
