homemade noodles?

Has anyone tried making homemade noodles with any lc flour & eggs?
I made them a few times years ago with reg hc flour & eggs, make a thick dough, roll out, cut into long noodles, dry before boiling...

If so which flour?
The ingredients seem pretty simple so I would guess someones done it

I've not tried it yet, but it's on my radar for a future experiment. I do love homemade noodles, especially in chicken soup.

When I get around to trying, I'll let you know. I have done the lc noodles made with egg and parmesan cheese, and they're....meh. Okay. They don't have the structure/texture of a proper noodle, and I don't really want cheese in my noodles

I have tied it (only what I make is dumplings, but very similar to making egg noodles). There is something about the low carb flours. It just doesn't seem to want to hold together in the water or broth. Making them with the egg, helps, but they do still tend to disintegrate. Still tastes yummy tho. But as noodles they probably wouldn't work too well, unless you are wanting noodles in a sauce or gravy.
I have been toying with the idea of adding some Glucomannan to the dough tho. I will want to try out with a small batch first to see how that works. Have no idea when I'll get around to trying it. Might be quite some time.

I appreciate your input.
I may try it at some point but since it's getting warmer, it's not noodle weather. lol
But I love homemade chicken noodles with the thick broth & carrots (very few), celery & onion...in the fall and winter. Nothing as comforting when you have a bad cold or are just chilled to the bone.
