Easy quick bread

My son does primal blueprint diet, so he eats nothing processed. He can't eat peanut butter either, no peanuts! on his plan. This turned out pretty good. I had a tuna salad sandwich today with it. The slices will be small, so think the size if you cut a regular bread sliced in half. I used 4 slices for 2 half sands.

1 cup natural almond butter
3 XL eggs
1 Tablespoon vinegar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 packet sweetener

Blend almond butter and eggs until smooth. Add in remaining ingredients. Pour into a sprayed loaf pan and smooth the top. Bake at 350 degrees for 30-40 minutes. Let cool before slicing.

I baked for 35 minutes and it was a little dry, so next time I'll try 30 minutes. My loaf pans are fairly large though so that might be why.

Wow, that bread looks fantastic. I might try that tomorrow. I would love to switch my kids to something like that.

That is where I got this recipe from, thanks, I couldn't remember, too much web searching lol. I came across that site through Primal blueprint I guess

I would use a small one if you want the bread taller. My pan is 5.5 x 9.5

Yes go with smaller pan, my pans are huge, like I said mine are 5.5 x 9.5 which is bigger than standard 8" even. I think 7" would work well.

Need more peanut butter and a smaller loaf pan..This looks wonderful..I think it would be great toasted with butter..

I made it in a medium sized loaf pan. It actually is a pan that came with my toaster oven.

It came out okay, tastes very peanutty. I think it will work good for breakfast with some jam, but I'm not sure about for a sandwich.

I think I'll get some almond butter and try that next time.

I am a peanut lover, so I don't mind the nutty taste at all. When I put on a good flavored condiment, I can't tell at all that it is made from peanut butter. Tonight's was a good strong honey roasted barbecue sauce. That is already a bit sweet so it goes together so well--at least to me. Mr. Peanut bread does rock with some sugarfree jam, too though.

I got 3 mini-loaves.
Baked for 20 minutes.

Still cooling but here are the pix thus far I am a messy cook, don't mind the blobs on the edges, non stick pans lol

I cut my mini loaves lengthwise to get the longer pieces. Gonna try making a grilled cheese now. I'm excited

Great texture, not eggy at all. Definitely nutty but I love that. I didn't have baking soda so I used baking powder. Turned out fine. Rose well.

I forgot to get the peanut butter while at WM today..But, I forgot cat litter, too..So, I need to go back..

How about a cream cheese/SF jelly sandwich???
