Dawnyama, this is very good! I made a big bunch for me & just kept eating it with other meals all week. It ended up being a substantial side. The rest of the family liked it OK.

Barbo, I sure agree with you the diet they try to put newly diagnosed diabetics is a JOKE! Low carb is the only way to control it.

What is wrong with the medical community?

So I made this recipe is excellent!!!!! I made some homemade salsa and ate it with the casserole. OMG!!!! SO GOOD!

Made this tonite and it is outstanding. It reminded me of a quiche so I thought I might try some of my fav quiche ingredients. bacon, spinach swiss cheese. I also thought maybe lowering the calories with laughing cow cheese mixed in with the other cheese. Wonder how I can lower the cream calories. Thanks for the recipe.

I made this using broccoli and cauliflower....the kids gobbled it up, but asked next time for only green broccoli. "white broccoli" is apparently only good raw LOL

making this for dinner tonight with extra smoked gouda and cheddar cheeses, adding in sauted onion and sprinkling with parmesan, cheddar and almond flour topping mix- also just a teensy dash of nutmeg in the cheese sauce is my secret ingredient.

I'm going to make this tonight. It calls for 2 16 oz bags of cauliflower, right?

Also, is 8oz of cheese equal to a cup? One more question, is this baked in a 9x13 pan?

I use 2 1lb bags of cauliflower. And I am not sure if 8 oz is a cup, my bag of cheese says that 8 oz is 2 cups? I bake it in my casserole pan. The Corning ware round one. I don't use the 9X13 because it seems like it would not fit--the casserole only makes so much and not enough to fit in the 9X13.
