Chocolate Coconut Flour Muffins (insanely good!!)

Chocolate Coconut Flour Muffins

6 eggs, pastured and at room temperature (I used 4 eggs and about 3 TBS chia gel)
1/4 c. coconut oil or softened butter (I used butter)
1/4 c. coconut milk
1/2 c. sweetener (I used ideal)
1/2 tsp. sea salt
1 tsp. vanilla
1/2 c. coconut flour
1/4 c. cocoa powder
1/2 tsp. baking soda
1/4 c. sugar free chocolate chips (optional, but I used them)

Directions:
Cream together sweetener and coconut oil. Blend in coconut milk, then eggs (if eggs are cold, you will get lumps of coconut oil mix throughout your batter). Add vanilla and salt, stir. Mix dry ingredients together and then blend into wet ingredients. Fold in chocolate chips.

Bake at 400 for 15 min. Or, 10 minutes for mini-muffins. This will make one dozen regular muffins, and 3 dozen or so mini muffins

**These are wonderful and taste like regular wheat flour muffins. Perfect in the morning with coffee or as a treat after dinner. Hit the sweet spot perfectly. Enjoy!

A New Day - I get the Bob's Red Mill from Netrition. They are an awesome company to order from - their prices are better than most local shops and the shipping price is very low too. It's best to get a big order up so that the shipping feels even lower! LOL, it's the same set price if you get 1 bag of coconut flour or if you get a big old box full of stuff!

Thanks Pooticus for the speedy reply. I will check out Netition, for sure, I've seen Netition on low carb friends as a place to buy low carb items. Great news about the shipping!

I want to make my own granola bars - my kids are eating Nature Valley granola bars, and I read the ingredients today - all things that now make me cringe - whole wheat flour, sugar, oats, soy lecithin.... Hopefully they will like what I make - I just ventured into the land of making coconut bark - it's in the freezer now, hope it will taste great and that kids will like it too - a snack I can offer that is good and good for them

Pooticus-they would really work for making them into whoopie pies.

I use Bob's Red Mill too, but I don't remeber where I got mine. But I would suggest Netrition as well.

I think I am going to make another batch tonight and I think I am going to add some pecans to them along with the chocolate chips. YUM!

I am glad to see that so many want to try them. They really are super yummy!

I made these tonight - haven't tried them yet, they're still cooling - but I was surprised at how little they rose. They are about half the size of a normal muffin. Did anyone else have this issue?

I buy coconut flour in the bulk bins at Whole Foods. I'm not sure if it's any cheaper than Bob's Red Mill, but you only have to buy what you need, so you can buy smaller amounts (and it may be cheaper, I just haven't checked).
