Oooo Tweak - those look good! What'd you do to make the pumpkin Danish?

DH and I were just talking about these Danish the other day. I haven't made them in ages and he was wondering - WHY???

Char-I made the batter as usual adding to the dry ingredients 1 packet of sugar-free apple cider mix; to the wet ingredients I added 1/2 cup solid pack pumpkin, 1/4 cup equivalent EZ-Sweets (6 To 8 drops), a splash of DaVinci pumpkin syrup, no water and pumpkin pie spice. I made a cream cheese/pumpkin mixture, probably 4 oz cream cheese and 1/4 cup pumpkin with sweetener, fairly thick, dolloped onto the Danish batter and carefully spread out a bit. For the icing, along with the cream cheese, I added some pumpkin pie spice and a splash of pumpkin syrup, sweetener (I don't remember what I used, probably stevia or EZ) and cream.

I had one for breakfast today, nuked for 20-30 seconds - just enough to warm the Danish but not melt the icing - yummy!

I haven't made these in quite a long while, but since DH and I are now on induction again - I'm thinking these will be happening pretty soon! Not the cherry kind right away, probably a cinnamon version.

Char - seems like a lot of us are doing induction again! Guess we had fun over the holidays!

I'm glad you revived this thread though, I think I still have some of those pumpkin donuts in the freezer.

Tweaker Geek, Did you use the same recipe for the pumpkin donuts? And how long did you bake them at what temp? I didn't gain an oz over the holidays, almost everything I had for 10 guests and me, was L.C. and no one complained............ Ann

Not sure if this was done already, but I ran the original recipe from post #1 through mastercook, not including the cherry topping-- just the base for the dough.

For 12 Danish, I get:
273 cal each
3g net carbs each
20g protein
216mg calcium

Thanks, Soren, LindaSue did that WAAAAY upthread someplace but I'm pretty sure her numbers were very close to what you got - nice to have double confirmation!

ETA this is what she got, very close. Thank you for doing that again, Soren. I like having two sources!

Per Danish with cherry filling: 248 Calories; 20g Fat; 10g Protein; 17g Carbohydrate; 10g Dietary Fiber; 7g Net Carbs

Per Danish without cherry filling: 228 Calories; 20g Fat; 10g Protein; 12.5g Carbohydrate; 10g Dietary Fiber; 2.5g Net Carbs

Ann - I made the batter as for the Danish adding 1/2 cup pumpkin, 8 drops of EZ Sweets, a splash of pumpkin (or vanilla) sugar-free syrup, no water. I also added 1 packet of sugar-free apple cider mix. You can add the cider mix either in with the dry ingredients or mixed into the syrup then added to the wet ingredients.

I think I baked at the same time and temperature, I don't have a note stating anything different.

Congratulations on not gaining over the holidays -- awesome!

I will, I've had pans for large and small donuts for years . I tried a low carb donut recipe a long time ago and didn't care for them and haven't made any since, so I'm excited to see if it works and I like them...................... Ann
