Roast

Somewhere in here is a roast recipe and the only part I remember is in a crock pot with a can of broth

Any suggestions? And what's the best cut of meat for a roast anyway, mine are always tough and not the greatest.

Pot roast--best cut is chuck. Brown it well in a little vegetable oil, and put it in the crock pot. Brown some onions in that oil in the pan, some garlic if you like it. Scrape that into the crock pot. Cover the meat with water, broth, beer, wine or a combination of the above. (Use some of the liquid to get all the brown bits out of the pan--that is where the flavor is.) Add some salt and pepper, maybe some of your favorite herbs--rosemary, thyme, parsley.) Put the lid on the pot, turn it on low and cook til falling apart.

I do mine in the oven, not the crockpot, and I would cook it at 250 for 6 hours or so.

I don't know if this is the one you are looking for but it came from this board a long time ago and uses beef broth. I'm sorry I can't give someone credit because I make it so often I don't even still have the recipe. It's really yummy and a bit spicy!

Place your roast in a crockpot, pour a jar of pepperoncini peppers over it including the juice, add 4-5 sliced cloves of garlic and a can of beef broth. That's it! Cook all day as usual. If you want to do it in the oven, cover and bake at 350 for probably 3-4 hours or until done.

Choose your favorite roast, brown it a little, throw it with some garlic, onion, spices, green chilis and a can or two of spicy rotell, then cook it 8-10 hours until it shredds. It is a great spicy shredded beef/pork that is good on its own or can be used in taco salads, spicy shepherds pie, etc.

Easiest one I've done that always comes out great is

4-5 lb chuck roast
1 packet dry ranch dressing mix
1 packet dry italian dressing mix
1 packet dry brown gravy mix
1/2 c. water

Put water and roast in crockpot, mix together all seasonings and sprinkle over top of roast. Cook on low 6-8 hours.

It will seem like alot of seasonings when you dump it in there, but it works.
