Revised Atkins Protein Bread

I can't remember who made this up, but I found it on the web..Looks interesting.

Atkins Diet Bread:

You can use whey protein instead of the soy protein in this recipe, or even use the Atkins bake mix instead of soy flour, this version had 0 carbs, which could be different if you use substitutions.

1/3 cup soy protein (whey protein)

1/3 cup soy flour (oat flour, Bob's or Atkins' bake mix)

¾ teaspoon of baking powder

2 eggs

3 tablespoons of sour cream/ or cottage cheese your choice

1 ½ tablespoons of olive oil

1/2 cup shredded cheddar cheese (mozzarella cheese)

2 teaspoons oregano , you can also add other herbs and seasonings depending on your taste. (optional)

Heat oven to 375

Prepare a loaf pan by generously coating it with butter, this will give your bread a nice crust, and prevent sticking.

Combine all ingredients except ½ of the cheddar cheese in a mixing bowl, mix well.

Pour into the loaf pan and top with remaining cheddar cheese.

Bake for 25 minutes, or until a toothpick inserted in the middle of the loaf com

I'm fine, Jennifer... It is an oldie..LOL.

My friend Carol who used to be on this board has been trying to get her dh to go LC as his
glucose level isn't great, and so they are doing oldie recipes.

Carolyn I use to make until I found out I was allergic to soy. I'm going to try this again using my pp and maybe some carbquik or kevins mix.

That's good to hear, Carolyn.

Rosethorns, I didn't realize you go back a long time with low-carbing. Wow, and I also didn't realize what a success you are at it. Wowzers!! Good for you!

Let's see if I can remember. I think it was about 12 slices. It was very dense. I know we could fix that now.

And with an electric knife it would be more slices.

I was just wondering if we could spread it out like foccaccia bread in a sheet pan and get the same number of slices out of it. A 1/2 sheet pan is roughly 12x17 and you could get 12 pieces out of a 12x17 at roughly 3x4-1/4" tall. Not quite bread shaped but big enough for a sammy!

I don't do soy either but was thinking of trying Jenn's new Gluten free bake mix in this tweaked so it doesn't contain flax or almonds.

That you for posting this. I am going through Dr. Atkins last book
I think lots of the writings were right before he passed.
We are trying to do the program the right way. He said no
aspartame, so we just got rid of it and replaced it with Splenda,
and other things. There are things that I have forgoten so I am
renewing with this book. I don't care for the books written by others
in his Atkins Company. I met him, he was a minch and loved by
many. I still miss his presence and I'm so glad that we had him
to revolutionize the diet world.

I agree with you Barbo . He was a wonderful man. The Atkins company is not him. His wife said that in an interveiw. I have his first book and his second. I never bought any of the Atkins bars , but I did buy his mix until we learned how to make it ourselves. I also have a recipe book of his and his wife. It's very good.

Poot I don't see why you couldn't make it like that. Let us know. I'm going to try Jennifer's bake mix with this bread too. I love her mixes.

Yes her mixes are wonderful!

Barbo I so agree with you! Thank goodness he had the strength of his convictions!!! and it's just so sad to see what his company has become, you know?

Pooti, you just reminded me that I bought a book about Dr. Atkins for a buck at Dollar Tree a while back. You can borrow it if you're interested. I found it quite interesting reading about his life and how he got involved with low carb. I at least got my dollar's worth from it, LOL.
