1 cup Agave Nectar = 1.5 c sweetener plus 1/3c. liquid.

I am thinking it might be the same for honey too.

I wish I did! I keep seeing these fantastic looking recipes and then. . . .blast. . . they have dates in them. The ones where they are a stand-in for sweetener I've just used one of "our" sweeteners and that has worked. But most of them use the dates for a significant textural component and _that_ has me stumped!

may be digested like fructose
may cause intestinal distress
best used in a combo with other sweeteners
Browns quickly- may need to lower oven temp and increase cooking time

Soobee makes a great caramel sauce with this

I've noticed that some recipes call for Stevia and others will say Stevia extract powder. These are different, yes?

How do people feel about monk fruit/luo han? I'm still pretty skeptical of it - I feel like I read something about fructose being involved and it was a big turn off.

All the stevia brands seem to have their own concentrations.

I assume it is fructose, but that is just my opinion. I think you are wise to be skeptical.
