I was in a hurry and didn't get a chance to mention that I can't have anything with gluten, so most of Jen's bake mixes aren't things I can use. Protein powder is a great solution, particularly since as a dialysis patient my husband needs to have large amounts of protein. I have a few recipes that call for protein powder with flaxseed meal used with it to keep it from being so dry. I guess I could try to use that mixture with some of the recipes here that sound so good.

Thanks for the suggestion. I guess I'm going to just keep trying to do all sorts of things with whey protein powder and flax meal.

Some people try to turn back their odometers. Not me, I want people to know why I look this way. I've traveled a long way and some of the roads weren't paved.

Nadine, why don't you start a new thread and ask for suggestion? I am sure these creative people will have lots of ideas.

Almond Flour Muffins

3 cups of almond flour
1-teaspoon baking soda
1-teaspoon baking powder
1/4-teaspoon salt
1 cup Splenda
1/2 cup of yogurt (can sub sour cream + 1 tsp. vinegar if you don’t have yogurt)
3 eggs
1-tablespoon vanilla

1/4 cup melted butter (if necessary)

Fruit or nuts of choice

Mix ingredients together, if batter is too thick add butter as needed to thin to muffin consistency. Add nuts or fruit if desired.

Put batter in paper lined muffin tins and bake 325° for 20 minutes or until toothpick inserted in muffin comes out clean.

Ok, these are amazing! I made them last night, and they're just as good as regular cupcakes!! I forgot to add blueberries to them, so they're just plain, but just as nice. I'll make a frosting for them instead.

Anyone know the carb count?

I make banana bread or muffins which sometimes turns into french toast.

I use it to make pizza crust, pie crust and biscuits.

I buy it in bulk at Central Market..so much cheaper!
