I've never written a recipe out, but basically I make a cheddar cheese soup (with sharp cheddar) and then add lots of burger chunks, onions, a bit of garlic, and then when I'm ready to serve it, I add raw chopped tomatoes and chopped iceberg lettuce (yes lettuce in the soup).

Here's what I do…

Simmer
2 cans of chicken stock
1/3 sm-med onion diced
1T minced garlic

Fry up 1 1/2 pounds lean burger in small meatball sized chunks and add to the stock

Turn heat down to low…
Add 4 oz cream cheese
Add 2 T heavy cream
Add 2-3 cups shredded sharp Cheddar

Simmer till ready to serve

In the bowl
Dice tomatoes and chop some lettuce and put in the empty bowls, then ladle the soup over the tomato and lettuce and serve immediately

Very velvety and smooth cheddar cheese soup - and next time I'm adding chopped bacon too

This is the one I make, which I got off this site.

** I garnish with the bacon and sour cream**

Cheeseburger Soup

* 1 lb lean ground beef
* 1/2 lb bacon
* 1 cup celery
* 1 cup onion, chopped
* 1/4 cup carrot, sliced
* 1 teaspoon basil
* 3 cups chicken broth
* 1 cup broccoli, broken into small pieces
* 1 cup cauliflower, broken into small pieces
* 1/2 lb cheddar cheese, grated
* 1 1/2 cups half-and-half
* 1/4 teaspoon pepper
* 1/4 teaspoon salt
* 1/4 cup nonfat sour cream

1. Brown the hamburger in a Dutch Oven, then drain the meat and set aside.
2. Brown the bacon, in the same Dutch Oven, drain it, and then return both the bacon and hamburger to the pot. Add the celery, onions, and carrots. Saute until the vegetables are just tender.
3. Add basil, broth, broccoli, cauliflower and cook until vegetable are just tender.
4. Then add the cheese, half-and-half, pepper, and salt and stir until the cheese melts.
5. Turn off heat and add the sour cream.
