Old Recipes For Newbies
Wouldn't it be fun to post some old recipes we have been using for years for everyone on the board. Come Monday, this place shoud be full of newbies and come backers. I'll start:
JUST LIKE CAMPBELLS TOMATO SOUP
1 8 oz can no sugar tomato sauce
1/2 cup water
1/2 cup heavy whipping cream
HOw to Prepare:
Mix all together in saucepan. heat and serve.
YUM YUM YUM.

This is my FAVORITE recipe - in fact I'm going to be making them in about 10 minutes! Even people who would gag if you TOLD them they were low-carb think these are excellent waffles!
"BettyR's Amazing Waffles
Preheat your waffle iron.
1 8 oz. package cream cheese, cubed
2 pkt. Splenda
1 tsp. or pkt. Stevia Plus
1 tsp. baking powder
1/2 tsp. baking soda
1/2 cup vital wheat gluten
1 tsp. cider vinegar
1/4 cup cream
1 cup shredded Mozzarella cheese
Put all ingredients into a food processor; process until smooth. Open processor and scrape down the sides with a spatula, then process another 60 seconds. The batter will be VERY thick - do NOT thin it down!
Place a heaping tablespoon (the kind you eat cereal with, not a measuring spoon) of batter into each waffle section of the iron and cook as you would regular waffles.
Makes 7 large waffles, approx. 3.6 carbs each
You can reduce the calories by using part-skim ricotta cheese in place of cream cheese and Hood's LC milk in place of the cream, if you like."
I don't bother to put the sweetener in because we use the leftovers like bread for sandwiches.
Also I've used all kinds of shredded cheese in these, whatever I have on hand. Even the Trader Joe's 3 cheese blend is really good! You don't taste the cheese (unless you used something very strong) and it works fine if you're not in possession of mozzarella at the moment.

This is Carolyn's recipe which is a great recipe.
Low Carb Pancakes
2/3 c. Carbquick
4 tsp. Splenda (opt.)
1 ½ tsp. baking powder
¼ c. heavy cream
2 tbs. French Vanilla Creamer ( they have s/f )
2 tbs. melted butter
Combine everything in blender.

I found this one invaluable when I was a newbie.It's from Linda Sue.WE Love it. This the large batch and no sugar.
I like to make a huge batch and store it in a large spice jar. This recipe makes enough for about 12 batches of taco meat:
LINDA'S TACO SEASONING - BIG BATCH
4 tablespoons chili powder
3 tablespoons paprika
4 tablespoons cumin
2 tablespoons onion powder
2 tablespoons garlic powder
3 teaspoons ground coriander
1 1/2 teaspoons cayenne
2 tablespoons salt
3 teaspoons xanthan gum
1 1/2 teaspoons MSG, optional
This makes enough for about 12 pounds of ground beef. It will fill a container about the size of one of those cans of parmesan cheese with the green label about 3/4 full. I bought my container at The Container Store but an old parmesan cheese jar would be ideal.
This one I've used so many times and still do. I mix bacon bits to this when I make the dressing.
RANCH-STYLE SALAD DRESSING MIX
1 tablespoon buttermilk powder
1 packet True Lemon *
1/2 teaspoon granular Splenda
1/8 teaspoon xanthan gum
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon celery salt
1/2 teaspoon pepper
1/2 teaspoon dill
1 teaspoon freeze-dried chives
Mix well and store in an airtight container in the refrigerator (see my comments below). This makes about 7 teaspoons dry mix. To prepare the dressing, whisk the mix into:
1 cup mayonnaise
1/4 cup sour cream
1/4 cup heavy cream
1/2 cup water
Chill a couple hours to allow the flavors to develop and for the dressing to thicken. Add 1 tablespoon minced fresh parsley, if desired.
Makes about 2 cups dressing
* The equivalent of 1 1/2 teaspoons lemon juice or vinegar. If you can't get True Lemon, just add 1 1/2 teaspoons real lemon juice or white vinegar when you add the wet ingredients.
NOTE: 1 packet of dry Hidden Valley Ranch Dressing mix has 16 net carbs.
Per Batch Dry Mix: 42 Calories; trace Fat; 2g Protein; 9g Carbohydrate; 1g Dietary Fiber; 8g Net Carbs
Per Batch Prepared Dressing: 1948 Calories; 209g Fat; 8g Protein; 19g Carbohydrate; 1g Dietary Fiber; 18g Net Carbs
Per 1 Tablespoon Dressing: 61 Calories; 7g Fat; trace Protein; 1g Carbohydrate; trace Dietary Fiber; .5g Net Carb
Per 2 Tablespoons Dressing: 122 Calories; 13g Fat; trace Protein; 1g Carbohydrate; trace Dietary Fiber; 1g Net Carb

I love this 'cause it saved me sometimes.
1 lb. hamburger
1/4 cup pizza sauce
1 cup shredded cheese ( i use Italian blend)
2 mushrooms sliced
1/4 cup sausage cooked and crumbled
8 slices pepperoni
Put hamburger in a 8x8 pan bake @ 350 for 15 to 30 mins., depending how cooked you want it. Take out of oven and drain off grease. Spread pizza sauce on hamburger, then the rest of ingredients how you want them on your pizza. cooked until cheese is hot and bubblely. ENJOY!!!!!!!!:clap::clap::clap::clap::clap:
One Minute Muffin or OMM
1/4 cup flax meal
1/2 teaspoon Baking Powder
1 packet Splenda or sweetener of choice
1 teaspoon Cinamon
1-2 teaspoons Butter
Approximately 2.1 carbs
Mix the dry ingredients in a large coffe cup. Add egg and butter; mix well. Microwave for 50-seconds to 1-minute. Muffin pops right out.
The recipe I know and love is:
2oz cream chesse (softened)
1/2 tsp vanilla extract
pinch of cinnamon
1-2 packets of splenda
mix in bowl, then microwave in intervals of 30 secs until middle is almost firm.
Even better with the glaze, which is : 1 tsp of melted butter, pinch of cinnamon and 1/2 packet of splenda.
Keep them coming...more of your favorites please! I had a serious case of the munchies this afternoon and made the OMM as a snack, poured a bit of DaVinci's Hazelnut Syrup over it. OMG...heaven and just what I needed!

Atkins Bake Mix - Homemade
Recipe By : Sherrielee
1 cup soy flour
2 cups soy protein isolate
2 tablespoon baking soda
1 teaspoon salt
2 tablespoons Splenda, granular
Sift together then store and use as you would Dr. A's. It's much cheaper and things come out about the same. 3 carbs per 1/2 cup serving.
Yield: "3 cups"
383 Calories; 18g Fat (38.8% calories from fat); 29g Protein; 33g Carbohydrate; 8g Dietary Fiber; 0mg Cholesterol; 9694mg Sodium.

Atkins Bake Mix - No Soy
1 cup almond flour
1 cup vital wheat gluten
1 cup Designer Whey Natural protein powder
4 packets splenda, packet
2 tablespoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
Mix all together and store in a zip lock bag in the fridge. When a recpie calls for bake mix, just measure according to the recipe.
Yield: "3 cups"
1457 Calories; 66g Fat (39.3% calories from fat); 169g Protein; 60g Carbohydrate; 16g Dietary Fiber; 80mg Cholesterol; 4763mg Sodium.

Almost all seeds can be ground in a coffee grinder or spice grinder in small amounts to use as flour.
Also Flaxseed meal is ground up flax seeds
Almond flour is ground up ALMONDS
You should also use Netrition for many needs that you can purchase.

Search...........At the top of page on any forrum you want to search there is a box called search forrum click on it and a little box will come down then write what you looking for. Like ( cheese rounds, cauliflower,one min. muffin etc).

Here are some of the recipes I came up with and use alot.
Honey BBQ Sauce
1 c. LC ketchup
1/3 c. SF honey
1/4 c. soy sauce
2 cloves minced garlic
Whisk together and tah-dah! Yummy BBQ sauce. It makes alot, but it keeps well in the fridge in an air tight container for up to a month.
Mindy's Teriyaki Stirfry (with thanks to Linda Sue)
1 pound ground beef
1 clove garlic, minced
1/4 cup soy sauce
2 T. of SF honey
Pinch crushed red pepper
16 ounce bag shredded cabbage with carrots
Brown the ground beef with the garlic. Add in the cabbage. Mix together the soy sauce, the honey and the red pepper and pour over cabbage. Stir it all together, cover and cook on medium for 10 minutes. Then push all to the back of the skillet and crack two eggs into pan and scramble, then stir into dish. Then serve and enjoy!

Beeb's Tuscano Soup
3 italian sausage links, hot or sweet
1 medium diced onion
1 tablespoon minced garlic, or 2 chopped garlic cloves
3 cups chicken broth
3/4 package frozen spinach
1/2 cup heavy cream
Salt and pepper to taste
1/2 tablespoon red pepper flakes
Take the sausage out of it's casing and crumble in a pan with diced onion and minced garlic. Cook until sausage is brown and done.
Put chicken broth, frozen spinach, browned sausage mixture, salt, pepper and red pepper flakes in a pot and simmer for 30 minutes.
After simmer time, add the heavy cream and simmer for another 10 minutes, or until everything is nice and hot. Serve and enjoy.
The first recipe I used from Linda adds grated parmesan at serving.
This is wonderful for cold days and regular people love it too. I have been thinking of making it with some floopsies or oopsies or whatever those things are, toasting the little things with butter and garlic. I know I can make the soup. Not so sure about the oopsie-floopsie thing.

Tuna patties are one of my favorite.. Just had them again last night.. They are just delicious and very very LC. I think I got the recipe from the recipe board here a while ago, but I can't remember the actual name or poster.. (don't want to take credit where it's not due)
( I make enough for dinner and lunch the next day)
2 cans of tuna (drained well)
3 stalks of chopped celery
2 cups of fried onions (Frenchs style in the can)
1/2 C of shredded cheese (any flavor you like)
Make patties, let them sit in the fridge for a bit to set up. Fry in a pan with olive oil until brown and crunchy.
Serve with drippings of soy sauce, or mustard.. whatever you like.
They are so dang numsters!!!
I also make the mock danish, but add ground flaxseed and vanilla whey protein powder to give it more substance. And of course, I pan fry it. I swear...with the cinnamon...it tastes just like french toast!
This morning I'm having it with a little powdered erythritol and chopped peaches. Yummy!

this was one of my first favorite and used over and over again recipes. Posted here by Cheri, it's a Stillman's recipe. I have used pork and also have made in crock pot.
Cola Chicken... omg is this ever good!!!
Cola Barbecue Chicken
4 boneless, skinless chicken breasts
1 cup catsup (There is a recipe for lowcarb catsup on the newbie site under must have recipes if you would like to try that)
12 oz. can diet cola (best if you use diet rite!)
Put chicken in nonstick skillet. I usually brown my chicken a little first before pouring the catsup and diet cola over the top. . Bring to boil. Cover, reduce heat and cook for 45 minutes. Uncover, turn up the heat and continue cooking until the sauce becomes thick and adheres to the chicken. It turns into the most incredible BBQ sauce.

I make Orange chicken in the crockpot.
1 whole chicken
1 can diet Rite tangerine
1 tsp. orange zest
spices to your tasting ( I use Spike and garlic)
I put all together in crock pot and cook till done.
I also do this with diet cherry cola. And different spices.
