Coconut flour baked donuts?
 
I got a donut ( doughnut?) pan for Christmas :p

I know I saw a recipe for coconut flour donuts using a pan instead deep frying. But, I can't find it....

Comfy belly as one with honey but, I don't know that I can just sub erythritol for the honey?

Does anyone have a recipe for baked donuts using coconut (or even almond) flour?

Have you tried Skeeter's donut hole recipe? You might be able to make your donuts out of this recipe.

On the honey..you can sub erythritol and add some splenda, too for a balanced sugar taste.

I know I have seen that someone made baked donuts out of oopsie batter. Not sure who it didn't come up in my search.

Thanks! I did see those as well but was really hoping for one with coconut flour. I don't really want to use cream cheese.

What about if you tried the coconut flour yellow cake recipe in this collection of recipes. I have never made it into donuts but I'm sure it would be good.

I found this information on subbing honey in case you wanted to try the recipe from comfy belly. I should try the recipe, I picked up a donut pan a while back and forgot about it.

Use 1 1/4 cup of sugar to replace every cup of honey. Also add 1/4 cup of liquid, which could be water, milk or oil.

Just found this also!! Hope you see this before you try the recipe!!

Eliminate the baking soda in the recipe that calls for honey. Baking soda is used to take away the slight acidity form the honey and is unnecessary with the use of sugar.

Jbatchelor - I got an electric mini donut maker. I dont love it. I really wanted a regular size donut pan. The donuts are tiny so the kids ended up eating 4 of them. But, theycooked in a matter of minutes so, that was nice.

Anyway, here is the recipe I used. I ended up finding the original one I was looking for. The kids adored them! They gobbled them down. I made a chocolate glaze by heating some heavy cream and adding some dark chocolate, stir to melt the chocolate and then I dipped the tops.

Coconut Flour Donuts
1/4 cup Coconut Flour
1/8 tsp Sea Salt
1/8 tsp Pure Baking Soda
3 Large Egg
1/4 cup Unrefined Organic Coconut Oil warmed
May add sweetener to taste*(I added one packet erythritol/stevia combo)

1. Preheat oven to 350 degrees F.
2. Blend all the dry ingredients together in a bowl.
3. Blend in all the wet ingredients into the dry ingredients.
4. Mix until well-blended.
5. Fill donut pan circles about 2/3 of the way full with batter.
6. Bake for about 20 minutes, or until a toothpick comes out clean.

I am tempted to try this but every time I make something with coconut flour it has the taste and spongy texture of eggs. If we didn't have to use so many eggs it wouldn't be that bad. Maybe I can just add oil or low carb milk for the moisture instead of so many eggs.

The only thing I can think of to use instead of so many eggs would be chia, pumpkin, or s/f applesauce. HTH

I was doing a high protein day yesterday so I didn't taste them but, I do know what you mean about the eggyness. But, because donuts are so small and they get cooked on all sides, I wonder if that helps? I'll make another batch today and let you know.

I did this with s/f apple sauce like Nigel suggested. The pumpkin sounds like it would be good too!! This is what I did, my changes are in parenthesis. This made 6 regular sized donuts. I just took them out of the oven and tasted one, and it tasted like plain cake like donuts!! I would make this again for sure!! I am thinking about dipping some in a simple syrup made out of xlyitol and then dipping in coconut. Will let you know!

Coconut Flour Doughnuts

* 1/2 cup of coconut flour
* 1/4 teaspoon of sea salt
* 1/4 teaspoon of baking soda (omit)
* (1/4 tsp nutmeg)
* 6 eggs (3 eggs + 1/2 cup s/f apple sauce)
* 1/2 cup of honey (or other sweetener) (1/2 sugar + 1 or 2 tbsp water)
* 1 tablespoon of vanilla
* 1/2 cup of unsalted butter (coconut butter, coconut oil, or regular oil will work as well)

These are really good and are AWESOME with a cup of coffee!!! I suggest people run to their kitchens and try these!!! LOL

I used this recipe and they turned out great in my babycakes cake pop maker. My 11 yr old ate most of them before I took the pic. She rolled them in sugar, I just ate them as I sipped my coffee.

im doing an experiment atm for some LC Doughnuts, so far iv used
1/3 cup LC foods bread flour
1/3 cup LC foods cake flour
1 cup coconut flour
1 scoop vanilla protein powder
1 tsp yeast
1/2 tsp baking powder
nutmeg, cinnamon, vanilla spice
liquid sweetener - couple drops
divinchi syrup (caramel flav) 1/2 cup
1/2 stick of cream cheese
2 tsp melted coconut oil
SF maple syrup

my train of thought is the bread flour provides the bread like texture of a doughnut, but combined with the sponge of cake flour, will be interesting to see them combined....cream cheese to hold it to together, and keep the inside moist as the coconut flour might dry them out .... if it works, ill post them up, i have them rising atm :)
