Magical Peanut Butter Cookies by Billie

vli1127 asked me to post my recipe for the Magical Peanut Butter Cookies. Here it is. I was thinking I had used some other sweeteners. It's been a long time since I made these. You might want to use more sweetener. Some recipes call for 1 cup, some 1 1/2 cup sugar equivalent.
As you sse this recipe does take some specialty ingredients. Haven't tried other sweeteners such as Eryrthritol etc, so don't know how they might change it.
These were less fragile the next day.

Magical Peanut Butter Cookies -- w/PolyD 2

Amount Measure Ingredient -- Preparation Method

1 cup peanut butter, sugar free -- creamy or crunchy
1/4 teaspoon Sweetzfree (1 cup Splenda granular equivalent)
1 egg (2 if needed )
1 teaspoon vanilla extract
1/3 cup Polydextrose
1/4 cup Wheat Protein Isolate 5000

Preheat the oven to 350 degrees F. Grease a large baking sheet. (I used a silicone mat, sprayed)

In a mixing bowl, combine the peanut butter, the egg, Sweetzfree, and vanilla, and stir well with a spoon. In another bowl, combine the PolyD & WPI, then stir into the peanut butter mixture. I had to mix & knead with hands to combine well. Roll the dough into balls the size of walnuts
or just smaller (I did the later - & got 28). Place the balls on the prepared baking sheet. With a fork, dipped in sugar replacement to prevent sticking, press a crisscross design on each cookie. (I just flattened with my fingers, and omitted the extra sweetener.)

NOTES :
I have sprinkled sesame seeds on top & pressed in. I like that addition. It adds a little calcium to the cookie (how much depends on amount used, and 1 tablespoon is a guess. They do not add measurable carbs.

Also the serving size is variable.


Bake for 12 minutes, remove from the oven. Cool slightly before removing from pan.

BTW, you might start out with 3 Tbsp of the WPI 5000, and add the other TBsp if needed.

I haven't made them in a VERY long time.
