Stayed low carb on Christmas while eating the best stuffing ever!

I was dreading Christmas dinner because I love my hubbys stuffing. I was dreading having to look at everyone eat it while I just watched. Well, I told dh that I hated the fact that I couldn't eat the stuffing and he was like lets run to 7-11 and see what they have since the grocery store was closed. Well, I scored big time! He picked up three bags of pork rinds one being hot and spicy. He made regular stuffing for everyone else and he made mine with the pork rinds. Well, I must say... MY STUFFING TASTED BETTER!!

Everyone wanted my pork rind stuffing instead of the breaded stuffing. I was sooo happy to be able to eat a great Christmas dinner with turkey stuffing and veggies and STILL be low carb! For desert I had one Big Train chocolate chip cookie and one Big Train chocolate brownie.

PERFECT!!!!

That is wonderful. It can be done if we just look for ways to make things low carb. I used pork rinds in place of bread crumbs in my favorite meat loaf recipe, which is mine , and it turned out even better. I will have to try the hot and spicy if I can find them. I would love to see your DH stuffing recipe.

I googled THIS sounds wonderful *drools* (not sure if it's the OP recipe)

Rani's Pork Rind Stuffing
(Will stuff a small roaster, double or triple the recipe if you want more.)
1 3-4-ounce bag plain pork rinds, lightly crushed
1 egg, beaten
1/2 can chicken broth
1/2 onion, diced
2-3 stalks celery, diced
herbs to taste (suggestion: thyme and sage)
2-4 tablespoons butter
Cook the onions and celery in the butter until tender. Toss with the crushed pork rinds. Pour the beaten egg over the rinds and toss lightly. Add up to 1/2 can of broth until the mixture reaches the desired consistency. Bake as for regular stuffing, in a casserole or in the bird. This looks and tastes like the 'real' stuffing!

I made it last night to accompany my turkey and it is pretty good. I think I would cook it a bit more next time (only 35 mins. this time) but the flavour was great.
