Rosethorne,

I made the Irish Cream Monday night. I have to say, with this recipe expect quite a bit of Irish Cream! I filled an old Bailey's Irish Cream bottle and more than half of an old liquor (whiskey) bottle. Maybe I beat it too much with the immersion blender and this could have increased the volume.

Wow no kidding, Nikki? What kind of whiskey did you use? Curious as I don't know whiskeys at all.
and did you follow original recipe with cream?

I used Early Times Kentucky Boubon/Whiskey. But, I felt it had too much of a whiskey flavor... too strong. Guess I was really expecting this to be a true Bailey's Irish Cream!

As I mentioned above, I had two containers of Irish Cream. Tuesday night, I emptied the half full whiskey container into my Vitamix container. Added more HWCream and some (about 1 Tbsp or 2) of Divinci's Kuhla (spell ?)Syrup, mixed it up in my Vitamix (walked it up to 6 or 7), and blended it for a while. Guess what... I think I got it!

My husband kept telling me I was wasting my time & money making this. Well, last night he tasted it and said it really was very good. Yes, I like it too! Now, when I add the Irish Cream to my coffee... it turns the coffee to a rich cream color.

Guess it is all trial and error... whatever suits your taste buds. Good luck!

thanks for the quick response, Nikki! Hmm I wonder if using Jameson's would be more like BIC? I want the authentic flavor too. I'm going to try adding in some dried coffee as another poster suggested. it's a lot of HWC and whiskey to play around with though LOL your husband might be correct

I was just going off when I got your message. I, too, used 2 Tbsps. granualted coffee crystals. But, it didn't have the coffee flavor! But, the second time when I added the DiVinci's Kulha (spell ?)... this made the difference.

I was comparing this to Bailey's Irish Cream... well Bailey's is certainly not low carb and I really should not compare the two. But, thinking of all the calories I'm saving... now this is pretty darn good stuff!!!

Well that saves me buying some taster's choice (blech) lol. I'll get the kahlua sf syrup and use that.
