Low Carb Magic Cookie Bars

This is a LC Version of the HC Magic Cookie Bars made with Sweetened Condensed Milk. These taste so close to the original I doubt anyone will even know they are LC!

LOW CARB MAGIC COOKIE BARS


Ingredients:

1/2 cup Jennifer's Bake Mix (add 2 tbs sweetener if using an Unflavored Whey Protein Powder in this bake mix)
1/4 cup almond flour
or you could use 3/4 cup Almond flour with 2 tables sweetener
5 tbs butter, melted
1 full recipe of Table Cream Sweetened Condensed Milk (here: http://www.lowcarbfriends.com/bbs/lo...ble-cream.html)
1/2 cup or more slivered almonds or nuts of choice
1/2 cup unsweetened coconut
1/2 cup SF chocolate chips

Mix Bake mix/almond flour or just almond flour/sweetener with melted butter and pressed into a 5 x 7 inch pan

Bake in a 350 degree oven for 10 minutes or until light golden brown.
Set crust aside to cool.

When crust is cooled pour the Table Cream Sweetened Condensed Milk over top of crust and spread evenly. You can tap the pan a few times to even it out more.

Sprinkle 1/2 cup slivered almonds or nuts of choice over Condensed Milk

Now sprinkle 1/2 cup unsweetened coconut

Then sprinkle 1/2 cup SF Chocolate Chips on top of everything

Press all the toppings down a little into the milk.

Bake in a 350 degree oven for 20 minutes or until it seems "set" or firm.

Take out and cool completely before slicing into bars/squares.

I got 20 small squares from my pan.

You beat me! I was going to attempt to make a LC magic cookie bar..

I am going to attempt this weekend to do the same as you I think!!

Have you tried it with just the almond flour and sweetener and not Jennifer bake mix yet?

Wonder if I 8 inch square pan will work?

Awesome!!! I'm so making this for our cookie exchange! I'm going to try it with an all almond meal crust. I can't imagine why it wouldn't work??

Linda, How about trying this recipe with your sweetened condensed milk? I would but I don't have any table cream and probably will be a while before I can get out to purchase some.

3 tablespoons cocoa

2/3 cup sweetened condensed milk

11/2 cups shredded coconut

1/8 teaspoon salt

1/4 teaspoon vanilla

Combine cocoa, milk, coconut, salt and vanilla.
Drop from a teaspoon onto a greased baking sheet.
Bake in a moderate oven (350°F) 15 minutes.

OH MAN!! This sounds sinful, thank so much for the recipe!! I will have to try it, but maybe someone else will beat me to it! Either way, let's report back to see what it tastes like!

OOPS!!!! I MADE A TYPO IN THE RECIPE AND JUST SAW IT!!!

It is 5 TBS of Butter, melted not 6 TBS of butter, melted!

I have asked if the admins can fix this, but not sure if they can do this so I wanted to give everyone a heads up on this mistake. Using 6 TBS will make the bottom crust too wet and it would not set up right!

If the admins have fixed this please disregard this post!

Would Cleo version of LC Sweetened condensed milk work in this??

I cant get to town today because of the weather and I have the stuff to make her version...

I haven't tried it yet. I'm in my last days of phase 2 of HCG so, I don't dare make it yet. But, I'm officially in phase three on 12/22 so I plan to make it that morning.

My exchange is on Christmas day so, I'm going to test run a couple recipes on 12/22. Will report back

Miss you too!!! There never seems to be enough time.....

Linda, I made your sweetened condensed milk and the coconut cookie recipe. I must say your condensed milk was just like the real thing and the cookies I made with it turned out excellent. My husband ate a whole tray of them. They were like chocolate macaroons. Thanks Linda you are awesome

OH thank you so much!!! I'm so glad you like the condensed milk and now I am going to try your coconut cookie recipe! My DBF will love them, I'm sure!!

ok, as soon as i read this recipe it reminded of these sinful carb filled bars i used to make.

the crust was oatmeal, flour, and butter. baked it....let it cool...add PB to a can of sweeten condensed milk...spread that over the crust...put m & m's and choc chips on top of that, then top it all with a light dusting of some leftover crust mixture. then bake.

so this is very similar to that HC version.

i just made some using all almond flour for the crust. i added a little pb to the scm (will use more pb next time)...sprinkled with lc choc chips and chopped walnuts. i then sprinkled the top with more of the almond flour/butter mixture....pressed it down a little and baked. just took them out of the oven so haven't tried them yet. they look yummmmy!

ok, you talked me into it...just cut a piece to give them a taste.

HOLY COW!!! they are yummmmy!

crust is a little crumbly and could use something, flavor wise...not sure what that is yet. but otherwise, they are divine! i stuck them in the fridge to firm up some.

OMG BEEB!!

These are to die for!!

Everything came out perfect..but I was wondering if you could put the unsweetend cream on top instead of on the bottom with the crust...that is the way I do my original magic cookies bars that way; do you think it would work?

These are SO rich and wonderful and I want to make a second batch tommorow..
