Low Carb Sweetened Condensed Milk Made From Table Cream!

I had a recipe from my HC days with was a sugar cookie crust, baked until golden brown, then a can of sweetened condensed milk would be poured over it, coconut sprinkled on top of the milk, chocolate chips and optional nuts. Then baked in oven until "set". This is something like Jennifer just posted but without the cream cheese and sour cream in the filling and what gave me the idea to try to de-carb the HC recipe.

I decided to see if I could make the sweetened condensed milk from Table Cream since as I was making the Table Cream Fudge it so reminded me of Sweetened Condensed Milk before the chocolate ingredients are added I thought maybe it would work.

Well, I did it!! It came out amazingly good and tasted just like Sweetened Condensed Milk and also was thick as well.

Here is what I did:

1 can Table Cream (Media Crema)
2/3 cup sweetener (I used Ideal Sweetener)
2 Tb unflavored Whey Protein Powder
1/2 Tb Vanilla Extract

Whisk all together and place over medium heat until thickened. Use in recipe of choice or refrigerate until needed.

That simple AND that good.

Now I'm going to try my old HC recipe and see what happens. Will be sure to report back!

You know, Linda, I was musing the same last batch of fudge I made - thinking, this IS condensed milk, just not SWEETENED...I wonder....

Glad you tried it out and can't wait for further reporting!

I use stevia to sweeten my condensed milk substitute for baking. I'm sure you could use anything you generally use as a sweetener--if one is needed.

I was talking about the cookie bars I made, not the sweetened condensed cream/milk. But thanks for the title idea, Char! I think we should just call it LC Sweetened Condensed Milk made from Table Cream.

Did you drain the crema before making this like you do when making the fudge, or just use the whole can of cream?

Didn't drain it this time, used it as is. I always keep one in the fridge so it was cold.

I don't know how pumpkin seed meal works in recipes, but I don't see why not. A meal is a meal, right, as long as it holds together to make a solid crust!

Any sweetener can be used in this. I am thinking of using liquid splenda next time to cut more carbs.

Beeb, I have a can of Media Crema here and it's only 7fl oz in the can. How can this come out measuring 2cups of liquid? Does your magic cookie bar recipe only use 1 "can" worth of SCM?

OMG, you are correct! I made an error here. This is only 1 cup as the serving size for this recipe. I'm going to blame it on Holiday brain fog and being up WAY too late for my own good!

You only need one can, poot and that makes the 1 serving (you use the whole done recipe) that is needed for the magic cookies!

I'm so sorry and hope I didn't mess you up too bad on this recipe! :blush:
