Wow! So happy to find this recipe! I had been looking for this exact thing in order to try my hand at some LC granola bars. Well...the bars are still a work in progress, but the LC sweetened condensed milk is fantastic! I wanted to post a reply because I made my milk a little different than the original recipe, based on what I had in my kitchen...

I did:

1 can of table cream
2/3 cup sweetener (I used 1 Tbls erythritol and 2 drops Ez-Sweetz)
2 Tbls zero-carb vanilla whey pp (in place of plain pp and vanilla extract)
1/8 tsp glucomannan powder (to thicken)

I made it on the stovetop as directed, and it came out thick, sweet and delicious! And with my substitutions, the only carbs are the ones from the table cream (which I counted as 13.5, since the label claims <1 g carb per serving and the whole can is 15 servings...I count carbs that are "<1" as .9).

I get mine in Walmart in the Mexican food section. Have also found it in the same ethic section in other grocery stores.

The whey is there to thicken it up. I have never had the problem you are talking about and am going to suggest you let it cook a bit more, if you can.

Maybe you could add a smidge of xanthan, guar, or glucomannan to thicken it up.

Does this taste "exactly" like the sweetened condensed canned milk? Reason I ask, is there is a "taste" the canned milk has that I have never been able to stomach in any recipe. Totally nauseates me, and few foods have that power over me. I can detect that "taste" a mile away, my mother and husband say. And my Mom has really tried to hide it from me a few times. But some of the creamy pie and bar cookie recipes that call for SCM have always intrigued me. So your alternate version has me wondering if I could perhaps try this.

Yes, to me it does, and I'm sorry about this taste for you. I totally understand because there are tastes I just can' stomach either.

Shucks....I was so hoping that wouldn't be your answer. I might try just one recipe with it, just to test it out. DH will always eat whatever recipe I do with it, as canned milk has never bothered him.

I know Linda says it does to her, but I am another that really doesn't like the taste of real SCM by itself. Once it's disguised in a pie or bar, I'm ok with it, but just by itself ... not so much!
However, I do like Linda's recipe. There is a little bit of a "canned" taste from the media crema but it's enough different for me to not mind!

I decided to see if I could make the sweetened condensed milk from Table Cream since as I was making the Table Cream Fudge it so reminded me of Sweetened Condensed Milk before the chocolate ingredients are added I thought maybe it would work.







Where can I find the recipe for Table Cream Fudge? I must have overlooked it in the recipe section.

Has anyone tried making the LC Condensed milk in the microwave? My stove is not working. I use the microwave or toaster oven for all cooking.
