REALLY GOOD HOT CEREAL!
 
This makes an AMAZING hot cereal and it's sooooo good for these cold days we are having! VERY LC, too and it makes a large bowl of cereal. I usually only make 1/2 the recipe and I'm full for hours! :clap:

The original recipe is from 4furbabies (thank you!) and I have tweaked it to make it lower carbed than the original. You can find the original on this thread: http://www.lowcarbfriends.com/bbs/lo...te-recipe.html

Here is my tweaked recipe:

Hot Cereal Recipe:

Ingredients:

2 1/2 cups flax meal
1 1/2 cup wheat bran
6 scoops vanilla protein powder (I use a unflavored PP with .5g carbs per scoop and add 1/2 teaspoon vanilla extract or other extract flavor of your choice.
nuts (optional)..... I didn't figure these into the carb count so please adjust accordingly.

Directions for Cooking:

1/2 cup cereal
1/2 cup water or coconut milk or HWC thinned with water (about 1/4 cup HWC and 1/4 cup water).
Mix all together in a bowl.
Microwave on high 30 seconds to 1 minute, stirring once in the middle of cooking, but not longer because it starts to bake like a 1 minute muffin).

And when done cooking I add:
splash of cream
pat of butter
A splash of DaVinci's or a drop or 2 of liquid Splenda
dash of cinnamon

1 serving is 186 Calories, 1.12g Carbs, and 16.96g Protein

Beeb, this was the second morning I had it. The only thing I did different was add a little salt to it, I really like it. It took me longer to cook it to get it to the thickness of hot cereal though, about 2 min, but that may be my microwave. Anyway, thanks for the recipe.......Ann

I use a little less coconut milk and a tablespoon of coconut oil. It was a pancake type consistency and uncooked when it went into the waffle iron. I used a medium setting on the iron because the coconut oil tends to make it brown very fast. But even with the medium setting the waffle came out perfect, cooked through and somewhat crispy outside.

I didn't add an egg, never do, and I think it is just fine. Didn't even think to add an egg because I added the coconut oil for a wet ingredient, but maybe next time I will add an egg and see what happens. ;)

OK I made this today and it was very good but I messed up and used vanilla protein powder. I wish I would have paid more attention and used the plain like Linda. The vanilla sort of over powered it, I wanted to use sf maple syrup and some brown sugar diabeti sweet but it was already sweet enough with vanilla protein powder. So I have a big container of it now and tomorrow I will add more flax and maybe more wheat bran to what I have already made up and see if I can then add the brown sugar and maple. Once again thanks Linda....It's a keeper :)

I found I had to add a lot more flax maybe 2 more cups and with the additional flax the vanilla PP was perfect. More flax also gave it more substance, reminds me of oatmeal or cream of wheat. I use coconut milk and heat it in the microwave not the cereal. I use about a tsp of diabeti brown and a little sf maple syrup, butter and splash of cream. Holy moley this stuff is really good, I even have it for a night time snack. Linda is my new BFF :heart: her recipes are making this woe a piece of cake :up:

I'm late to the table here, but I'm so shocked that I had to comment. I really, really love this cereal! :clap:

I've seen posts about flax, etc being used as a hot cereal and since I hate flax in baking, I was all.. "sure, sure.. whatever". :sick: The terrific thing about it (besides how satisfying it is) will be actually using up the 5 bags of flax I have!! I have quite a few LC baking and LC ice cream items that I fear I will never use (after using them once). Anyone need poly-d, lecithin, or glycerine? :dunno:

slbbw, it really is good isn't it, I too was shocked at how good it was. Like you I have tried many things and not liked them. I made a bundt cake once that everyone was raving about, it had like 6 lemons in it. I even went out and bought a special silicon pan. Anyway it was awful and I couldn't even it one piece, had to through the whole thing away. However, since then I have found when Linda posts something and says it's really good you can bet it is.

For those of you who love hot cream of wheat or hot oatmeal, this is a fantastic cereal. I just made another batch, and it's absolutely wonderful! My tip is instead of cooking in microwave which if your not careful you will end up with a muffin is just add boiling water. Then some sugar free maple syrup, butter and cream Bada Bing Bada Boom yummy, satisfying hot cereal.

Couple years ago Char posted this cereal or similarity.
I made it, liked it and have forgotten it until your post.
Char had equal parts, protein isolate, whole bran, flax.
I loved putting in French Vanilla and cream with dash
of Splenda.

Good tip on the boiling water and adding that to the cereal!! I love this cereal too, it's great for the cold weather! Very filling and keeps me from getting hungry for a long time.

I too love this cereal but add some almond meal to it and throw in a few of my home-dried lc cranberries. I cook it in Almond Milk instead of water. I learned this from Aarti Sequeira of Aarti's Party on Food Network. It gives it a nice nutty flavor.

I have been using this cereal mix to make muffins every day!!

I just mix up the dry ingredients and keep it in the fridge, Then when I want to make a muffin, I take a pat of butter and melt it, then beat in an egg and sweetener, then I add in 1/4 cup of the cereal ingredients with a pinch of baking powder. I sometimes add nuts, fruit or chocolate chips.
I use davinci syrup to sweeten so I don't need to add any other wet ingredients to the muffin.

I just got done eating a muffin! Love these they keep me full forever!!

Flax is so healthy, so it's a great way to include it into my diet.

Yup, sure have and this make the BEST waffles I have tasted!! I add an egg to the ingredients and a bit of cream to thin it out, in the waffle iron and it's WAFFLES FOR BREAKFAST!!!

I love the muffin idea, Gina, didn't think to do that!! :clap:

Let me first say that I am NOT a cereal lover...never have been. If forced into a corner, I will have Cream of Wheat maybe once or twice a year.

However, I've made this cereal twice this last week and really enjoyed it both times. I didn't want to make up the whole dry mix because I just wanted to sample it first. Here's how I made my single-serving based upon beeb's recipe:

In a microwavable serving bowl, I mixed these dry ingredients:
2 Tbs Flax
2 Tbs Almond Meal (instead of all flax)
2 Tbs Wheat Bran
2 Tbs (heaping) Whey Protein Powder (I used unflavored)
1-2 Tbs Sliced Almonds (I crumbled them to the consistency of oat flakes)

Then I added:
1/4 Cup Heavy Cream
1/4 Cup Hot Water
1 tsp Vanilla Extract (since I used unflavored WPP)
2 Tbs Chia Gel (optional, but it gave it more of a cooked oatmeal consistency)
6 Large Frozen Blueberries (optional)

Microwaved on high for 30 seconds, stirred. Microwaved another 30 seconds.

I then added:
2 tsp Torani's SF Syrup (brown sugar/cinnamon flavor was good)
4 drops Ezsweetz
2 Tbs Heavy Cream
1 Tbs Butter (optional...I omit)

Consistency was VERY much like oatmeal, especially with the chia gel and the crumbled sliced almonds added.

I'm thinking of maybe substituting Oat Bran (or oat fiber) for the Wheat Bran next time. Would this work to give it a little more oaty flavor?

I like your suggestion and I think the Oat Bran will work but not sure about the Oat Fiber. If you try either way or both please let us know! :high5:
