I use Gram Flour (chickpea flour) for my tempura batter and it's delicious. It seem a bit carby but in reality it's not because you use so little and it's a lot of fiber.

Also, try a search to see if anyone has used the coconut flour for tempura, might find your answer that way. Let us know if you try it, though. I am very curious to see how it turns out with coconut flour.

WOE: A 72 Induction (Hard Core!)
It works wonderfully. I made the most divine coconut prawns with coconut flour. I just ground up unsweetened coconut flakes as this was very inexpensive to do. My DH who does not low carb also loved the prawns. Restaurant quality without the hefty bill.

Next time I will take pictures!

So I used another recipe loosely so it's not really original.

I used raw prawns.
Whisk one or two eggs. (depending on how many prawns you are making)
I used one.
I then mixed in the ground coconut, into the whisked eggs, so that it was a thick, pasty mixture. Dip the prawns in the mixture. Make sure they are fully coated.
Then you place on waxed paper and stick in the fridge for 30minutes.
Then roll each prawn in shredded coconut and fry. I used a shallow pan with coconut oil. They only took a couple of minutes to cook.

They came out golden brown and truly decadent.

I did this with dessicated coconut and chicken instead of shrimps. LOL Yum! I wanna try it eventually with shrimps.
