What's your favorite way of eating pumpkin?

Please share your pumpkin recipes.

I always made them into soup. Do you have other ways with pumpkin?

I have 4 pumpkins sitting on my counter that call my name every time I go into the kitchen. I really need to make something. Wish I wasn't so tired I'd walk to Target for cream cheese-too bad they don't deliver

well my pumpkin comes out of a can but we love pumpkin greek yogurt...Plain yougurt with a few spoons of pumpkin and some pumpkin pie spice to taste makes a wonderfull breakfast..

My favorite this year has been the Paula Deen's pumpkin bars I low-carbed. EVERYONE loves them. It's really more of a cake than bars, but it's excellent in flavor and texture.

I also love pumpkin pie - that's been my favorite pie since childhood.

This morning, I made the banana nut muffins from Healthy Indulgences but, subbed pumpkin for the banana. My kids went gaga over them.

I absolutely love Jody's Pumpkin Bake...I've tweaked the amount of spices a bit and make a pan of it every week and have a piece for breakfast each morning...exactly like pumpkin pie!

I love pumpkin fudge. I wish some gifted person would figure out how we can duplicate this and make it low carb. I'm thinking cream cheese, pumpkin, butter.....somehow. I just know it can be done.
