I made these today. BIG MISTAKE! They are so very, very good! I can't stay out of them. I had 2 tbls hummus, some califl florettes, and 3 of these for supper tonight. I actually got 20 cookies out of the recipe. The only thing I may do differently next time (and there WILL be a next time), is to add a few nuts...pecans or walnuts. That way, they will have a little bit of a crunch. But, really, they are perfect the way they are! Thank you so much for this recipe!

You know I thought about adding nuts to these. I think that would be a great addition. I love crunch! Glad you liked them.

I just made them again with a mix of Carbquik and almond flour. The texture was a little different, but still good.

A few weeks ago, I made a plain chocolate chip cookie with almond flour and liked them a lot better than regular white sugar and flour choc chip cookies! I think it'll work. I almond flour!
