Flourless carrot cake

Carrot cake is one of my bigger weaknesses and this recipe looked very interesting. Even using real sugar it comes out at a reasonable 12 net carbs per piece. I imagine sugar substitutes could be used to bring the count down some more.

Pat: That is an interesting cake recipe..I wonder why it is crunchy? You could easily sub
AS's for the 1/3 plus 1/4 cup of the sugar. Not much added fat, except from the almonds, so I imagine it would be a tad "chewier", but wrapping it up probably makes it moister
as the carrots exude their moisture..

Sounds good.

I think what would make the cake a bit crunchy would be the toasted almonds. I ran this through MasterCook with a few low carb tweaks and here's what I came up with. The numbers aren't too bad carb-wise. My counts are based on getting 8 servings. I don't see how it would be possible to get as many as 10-12 servings out of a 9-inch cake.

8 ounces blanched almonds, toasted
1/4 cup granular Splenda (tweak)
1 1/2 teaspoons baking powder
1/8 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 teaspoons lemon zest
4 large eggs
1/3 cup granular Splenda (tweak)
2 teaspoons blackstrap molasses (tweak)
1 teaspoon vanilla extract
10 ounces carrots

Per 1/8 Recipe with granular Splenda: 230 Calories; 17g Fat; 9g Protein; 12g Carbohydrate; 3g Dietary Fiber; 9g Net Carbs
Per 1/8 Recipe with liquid Splenda: 223 Calories; 17g Fat; 9g Protein; 10g Carbohydrate; 3g Dietary Fiber; 7g Net Carbs

If carrot cake is your weakness, I highly recommend this one, which has been made carb-friendly by Chicken Lady - it is EXCELLENT and everyone loves it, low-carb or not!
