Giant Oopsie Cinnamon Roll
 
I used BikerAng's recipe but yesterday I tweaked it a little bit..

Oopsie batter:

4 eggs, separated
1/4 tsp. cream of tartar
3 ounces of cream cheese
1/4 tsp. vanilla
2 Tbs. Splenda

Separate the eggs,...whites in a big bowl..mix with a mixer, add cream of tartar then whip until stiff..

Other bowl: Mix yolks, cream cheese, Splenda, vanilla..After mixing whites, use the same mixer to mix this until smooth.

Fold a bit of the white into the yolk, then fold the yolk mixture into the whites and fold until incorporated..gently.

Take a 9 x 13 pan and line with parchment paper and put oppsie batter in it and bake
at 300 until done..(25-30 minutes)

Flip oopsie out and peel back the parchment..Save the parchment.

Filling:

4 Tbs. softened butter
2 ounces of softened cream cheese
vanilla
Sweetener to taste ( I used powdered E and some splenda)
(if you want, a touch of molasses)
cinnamon to taste

Mix this in a bowl while oopsie is baking..When oopsie is cool, spread this on top
of the whole oopsie and then sprinkle with chopped pecans..

Now, this is what I did: Slice filling covered oopsie into 3 long sections..
Take parchment paper and place it back into the 9 x 13 pan. Start in the center
of the paper and roll the first section of oopsie like a rose, then add on the pieces into a spiral until you run out of oopsie.

Mine was pretty tall so I squished it down with my hands a little..LOL..Next time I might cut the oopsie into 4 sections or 5..

Sprinkle top of the giant roll with pecans and bake at 325 for 15 minutes. Remove, let cool then add frosting..

Frosting:

3 Tbs. cream in a small sauce pan
1 Tbs. butter
1 Tbs. cream cheese
touch of vanilla
Sweetner to taste

Let this cook down a bit, til smooth and creamy. Let it cool before pouring it over the oopsie coffee cake/giant roll.

LOL..It is very easy..

However, I have some LC pancake mix and I'm trying a cinnamon roll using that tonight.

Are you stacking them when rolling it like a rose? Or just starting in the middle and rolling outward? I hope that makes sense. Not sure how to explaing but I dont know what roll it like a rose means.

Nope, rolling it like a giant rose..Starting in the middle, and rolling it outward..Yupp.

It is rather tall because the section of oopsie could be 3 inches across..

Honey: I haven't figured the ratios out..

I can't believe it... Just as my Oopsies were mixed my power went out. So I had this idea... to cook it on the grill... It worked!!! By time it was done my power had returned and I was able to finish the recipe, which by the way is awesome :O) I have all ready eaten half!! This recipe ROCKS!! yummmm

This looks great but WAY to labor intensive for me in my current state. Also, WAY too much for me to eat. SO, I took the oopsie recipe, added a little stevia (I don't use anything else) and cinnamon. Then bakeed in my muffin top pan. When done, I iced w/ a little cream cheese frosting and topped w/ chopped nuts. Easy peasy and the perfect size for me.

I figured the calorie/carb counts to be 1434 calories and 8.6 net carbs for the total recipe.

Made these and WOW!
 
Ok I saw the recipe today, did the calorie and carb counts and decided I HAD to try them. All I can say is amazing, so delish and sweet! Even my finicky teenage son loved em and wanted to eat them all up on me LOL. I did roll them a bit differently. I just smoothed out the oopsie mix on to a 1/2 sheet pan on parchment paper. When cooked I peeled it off of the paper and put the filling on the back side of the oopsie then I rolled the entire thing like you do with regular cinnamon rolls and cut into 1 1/2 inch slices and set them to bake another 10 minutes. Glazed when they came out and tried one right away! YUM!
