HOT FUDGE/GANACHE

i tried low carbing a ganache type glaze that I use on regular cupcakes. I was amazed at just how delicious it came out and thought I would share it with my lowcarb friends. I will dip my protein powder mini cupcakes with this glaze by just dipping them in the hot mixture. The glaze will set up on the cupcakes and they can be stored in a baggie without sticking to each other. The rest of the mixture I keep in the fridge for other cupcakes or I heat it up and use it as a hot fudge with low carb ice cream. Also I have drizzled this over cheesecake.

Here's the recipe.

1 stick of butter
1/4 cup plus 2 Tablespoons cocoa powder (easy way to measure this is 1/2 of a 3/4 measuring cup)
1 1/4 cup sweetner - I used a malitol/splenda/erythritol mixture
1 teaspoon vanilla extract
1/3 cup low carb milk or heavy cream

Melt butter then add cocoa powder, milk and sugar substitute and whisk until nice and smooth. Remove from heat and add vanilla.

If your liquid sweetener is sucralose/splenda based, just be aware sucralose doesn't hold up well against pure chocolate as the sole sweetener. You end up with a very bitter/flat backtaste.

The malitol in this recipe sends me running!!!!! And I'm afraid that is what helps it to hold up/set up so well.

1annewil, I used about 1/2 a cup each of malitol and splenda and then 1/4 cup of the erythritol. This amount was sweet enough for us. You can add more or less of sweeteners.
