I was just wondering if I could replace the veg oil with coconut. Seems like an awful lot of coconut oil though? I am pretty sure the first time I made these years ago I just used the veg but I dont buy it anymore .

Andi, I don't see why coconut oil wouldn't work for this - I'd probably go with the virgin expeller-pressed though - not sure how the coconut flavored oil would go in this!

Just took these out of the oven, baked in my sheet pan. Although still warm, are cake like. Once cooled, maybe more like a bar cookie? Great flavor!

I used coconut oil and baked them for approx. 35 minutes.

I used grape seed oil. I won't use vegetable oil. Maybe I will mix it with coconut oil next time.
