My favorite brand is Colgins. I don't care for the Wright's. It is too bitter tasting to me. (DH doesn't care for the Wright's either.) Those are the only 2 I have tried. Colgins is sometimes harder to find. But I have been finding it at my WalMart's. (But all WalMart's are not created equal.)

Well, I should've known someone would ask!

I think it was at Walmart, but we have what we call the "yuppie" Walmart in our town. It's a deliberately upscaled WM, and the product selection is different. Not that there's anything special about this size of smoke flavor, but there doesn't seem to be any particular pattern that I can discern over how they select their product mix. (We also have several 'regular' Walmart Superstores as well, but I don't think they carry this size. Could be I just haven't found it yet.)

Anyway, check at your Walmart and see if they have it. I had no hesitation in buying the larger size because from my past experience it keeps well without spoilage.

OMG, Beeb. I made this yesterday for our ribs tonight. Just had a taste, and it is unbeleivably good. She's right, tho, it had a funny taste while it was still hot, but in fridge over night, and the taste was gone. Can hardly wait to taste my ribs tonight. Thanks for this recipe. Julie

I made up a batch this morning. I was looking at Dana Carpenter's book and noticed she used tomato paste. So I used on 8 oz can tomato sauce and one 6 oz can tomato paste. It made it thicker without having to add gums.

What's the different in carbs: 1 lb. can tomato sauce vs. the 8 oz. can tomato sauce and 6 oz. can tomato paste?

The Contadina tomato paste has 6 g carbs per 33 oz. serving and the tomato sauce has 3 g carbs per 61 g serving.
But the tomato sauce has water, sugar, and spices added and you use less of the tomato paste. So, for me, I prefer the tomato paste.

RubyJ, I don't have a can of Contadina tomato paste to check, but my book says the can is over 30 carbs. Is the book wrong? I would love to find a lower carb tomate paste.

Sorry, I did a typo.
The tomato paste info I looked up was 6g carbs per 33 gram serving, not oz. That's 5 servings in a 6oz can, so it would be 30g carbs per can.

But I like tomato paste because at least the carbs are from the tomatoes and not from added sugar. A 6oz can of tomato paste in a recipe goes a long way and the carbs are "diluted" with other ingredients.

NOT all tomato sauce has added sugar!!!! Look for sugar in the ingredients, not the nutritional info. All tomato products (including paste) are going to list sugar in the nutritional info, cause tomatoes contain natural sugar.
Yes, some tomato sauces do have added sugar, but not all.
Again, check the ingredients list!

I made this Monday and was wondering why my sinuses were burning. Used it up and went to make more today and saw what I had done. It was so good but so spicy, I used it to make sloppy joes.

instead of 3/4 tablespoons of the hot sauce I put 3 to 4 tsp of hot sauce. I didn't make it that way this time.

I made it yesterday. Not bad. I'm not sure just how much I like it, but pretty good. It tastes more like spicy catsup tho seems like.
Of course I didn't follow the recipe exactly tho!
I didn't put much of the hot sauce in it at all, but did use some creole seasoning. Next time I'll leave the hot sauce out all together, and use the creole. I found out I don't care for the hot sauce. (Not a surprise.) I had used some of it earlier in the day making hot wings, and I thought I would never get the smell out of my house. YUCK! And thankfully I was able to open windows & doors, but the scent hung in for a LONG time. Don't like the smell, and it burned my nostrils. I just have very different tastes from most people.

As others have said, it does taste better today than last night. Have any of you eaten it reheated on meat tho? Does the taste "go back" or is it still better after "curing" in the fridge?

I'll try some later today with the chicken.

No, at least the tiny amount of hot sauce I added didn't make it hot. But I didn't care for the taste. Doesn't make it taste more like real BBQ sauce to me. Everyone has different tastes.
I'm afraid I'm still looking for a recipe. DH wasn't thrilled over it. Sigh!!!

DH likes hot sauce, so it wasn't the hot sauce taste that he had problems with. It's just still not what we're looking for.
Not dissing the recipe!!!! Just not for us. (Tho if I can't find SF BBQ sauce anymore, and can't find or figure out a better recipe, I may make it again, leaving out the hot sauce, and adding creole seasoning.)
