LARGE Oopsie in a Pumpkin

I bought Silicon Pumpkin Muffin Forms today and decided to make Cleo's Oopsie Rolls in them. They measure 4.5" x 3.5" inside measurement and are a little over an inch deep.

This was my first attempt at Oopsies and I'm so pleased on how well these came out!! I added 1 tbs of golden flax and 1 tbs of unflavored protein powder, a touch of salt and pepper. They taste amazing and as you can see by the pictures are large enough to slice and have a great size Oopsiewich! I found these Silicon Pumpkin Muffin Forms in my local A.C. Moore craft store and they were only $1.00 each!!

Cleo's recipe gave me 4 Oopsies using these muffins forms and even with the flax and PP the carb count is still only .90g!





You can see the Pumpkin impression on the Oopsie that is still in the pan!!

beeb, are these fairly easy to make? I'm truely hopeless in the culinary skills department, but I'm really interested in giving this recipe a try. Is this a dish that even a cooking novice could create?

I was so surprised how easy they are to make! I had been putting them off because of fear of the egg whites, but decided to give it a try. I'm sure I broke down the egg whites some when I was mixing the rest of the ingredients in, but they still turned out great! Give them a try, you won't be sorry!!

I will say though I had to bake mine longer in the pumpkin forms because they are deeper and bigger than the recipe says in using a cookie sheet and forming the oopsie rolls on there.

Yes, Barbo, I think they did come out firmer with the flax and PP. I have never made them before so not sure about this. And I don't think they taste eggy at all, maybe because of the addition of these 2 ingredients. I just love how big they are!! Next time I'm adding more spices!

I just came back from the store with these little pumpkin forms. They are too cute!! It took me forever to find them though. They sure did them at my store!! Cannot wait to cook something in them. The table cream fudge would be cute and some muffins too!!! Yeah!!

Got them at a craft store that sells baking stuff, too. I'm sure you guys have a few of them around your neck of the woods. It was a big name craft store, too!

I must have been in a hurry or something when I posted this!! I meant to say that "they sure did hide them at my store!!" And when I went in to get something else they have moved them again. So you may have to look around, or just ask someone who works there!!
