Breading for deep frying fish?

Any ideas?
I have been making a sort of mock KFC coating for chicken with crushed pork rinds, but it is baked in the oven. I use beaten egg and simply dip strips of chicken in the egg and then coat it in the seasoned crushed rinds.

I think baking the fish might not be so tasty done like that.

I have a nice new deep fryer that i have yet to use. (a digital basket style to replace my FryDaddy buckets)
I have not experimented much with deep fry coatings or meats in the fryer. i mainly use them for deep frying broccoli.

I guess i'm wondering if i use beaten egg and seasoned crushed pork rinds for the fish, the fryer might simply 'explode' the coating off the tilapia and make a complete mess of my oil with nothing to show for it.

i have things like unflavored whey protein, gluten flour, soy protein isolate, pork rinds and such available in the pantry.

Any suggestions? Thanks!

5-24-10 Still going, the digital scale croaked (after 8 years of duty) so i have no idea how much progress i have made. Too busy to use ******, but according to family and wardrobe, i am slowly but steadily progressing toward my goal!

7-15-10. Got to use the scale in the building where hubby works, as of 2 weeks ago i weighed 248, Yay!

I make a tempura-like beer batter - 2 cups of Carbquik and 12 oz. low carb beer, just mix together and then let stand about 10 minutes before dipping your fish (or onion rings, YUMMY!) into it and then into the fryer.

Lower the temp a bit though because CQ turns dark quicker than regular flour does.

For those trying the beer batter - run your fish or whatever through some (dry) Carbquik first, the batter will stick better.

Charski, did you try a one-to-one carbalose and beer combo in the past, and decide you liked this 4-to-3 mix of carbquik and beer better? (I think I tried the carbalose version in years past--for something--but I can't even remember how it came out.)

I don't think I did it with straight Carbalose - I can't recall doing that anyway! Who knows, the memory banks are apt to reject withdrawal requests these days.

If you like cornmeal fried fish, then go for it. There are less than 3 carbs in the half a tablespoon or less of your average cornmeal/salt/pepper/seasoning mixture that you would use to coat a fillet.
