Low Carb Coconut Flour Waffles

After tweaking different recipes I found on the net, I finally found a low-carb (to me, anyway) coconut flour, high protein waffle recipe that works. After four times of sticky batter, this waffle came out easily and puffed up very nicely.



Semi-Low Carb, Gluten Free Coconut Flour Waffle

-˝ small banana
-1 egg + 1 egg white (you need the fat in the egg yolk for this recipe to turn out)
-˝ TBSP. of Melted Butter or Coconut Oil

1 ˝ TBSP. of Coconut Flour (1 TBSP + 1 ˝ tsp.)
Ľ tsp. Baking soda

-1 TBSP. Coconut Milk
-1 tsp. Almond Butter (or your favorite nut butter—won’t affect the taste)

-1 ˝ tsp. of Honey (I used 1 tsp. of Guar Gum mixture + ˝ tsp. Honey to lower the sugar content)

-2 drops Stevia, optional

Blend all ingredients in a blender until smooth.

Grease your waffle iron extremely well with coconut oil or butter (no-calorie spray oils don’t seem to work—olive oil didn’t necessarily work, either).

Heat your waffle iron. Once heated, pour batter in the middle, making sure to leave some room on the edges. Press the top down on your waffle maker and bake according to your maker’s instructions.

Carefully take the waffle out of your waffle iron. These are fluffy and flimsy.

Top with a little butter, coconut oil or your favorite syrup.

This is where I need your help. First, to make even more low carb, could someone think about replacing the banana with something else? I haven't tried making it just without the banana, because I fear that it helps with the texture of the waffle.

Also, I need someone to try and whip the egg whites separately and then fold it into the batter before cooking. I don't have access to a hand mixer at the moment.

I wonder if substituting the banana with ground flax + water mixture? It would definitely bring more protein and fiber to the waffle. Let me know your ideas.

P.S. For the guar gum mixture, I use 1/4 cup of water + 1/4 tsp. guar gum (xanthan gum would work). I let that sit for about 20 minutes until it is the consistency of honey.

I would definitely try it with pumpkin.....wish I could find the cans around here. We haven't had any in stores for over 2 years.

That is such a good idea! I will have to pick up a can the next time I go to the store. I can't wait until Fall, then I can eat Pumpkin Low Carb Waffles every morning, .
