Handy Dandy Casseroles!

I love casseroles...especially if I can freeze them. They make life so easy. Please post your favorites.

Josie's Cheesy Mac Casserole

1 box Keto Mac and Cheese
1 1/2 pounds ground beef
2 tablespoons butter
2 tablespoons cream
2 tablespoons water
1/2 teaspoon garlic
1 (8 ounce) can pizza sauce
1 cup shredded Cheddar cheese
Salt and pepper

Boil Keto macaroni for exactly 5 minutes and drain.
Mix Keto cheese as directed on box and add pizza sauce. Blend well.
Gently fold mixture into macaroni.
Brown ground beef with garlic, salt and pepper.
Add macaroni to beef mixture.
Add half the Cheddar cheese and gently mix.
Sprinkle remaining Cheddar cheese on top.
Cover with lid and gently heat until cheese is melted.

Josie's Chicken Broccoli Casserole

4 boneless skinless chicken breasts
1 large bunch of broccoli - separated into florettes
1/2 cup mayonnaise
1/2 cup sour cream
1/4 cup chicken stock
1 cup sharp shredded Cheddar cheese
3 tablespoons French fried onions
6 strips bacon - cooked and crumbled
1 1/2 teaspoon curry powder
Salt and pepper
Vegetable oil

Saute chicken. Let cool and shred. Set aside.
Boil broccoli and drain. Don’t over cook. Underdone is best.
Mix mayonnaise, sour cream ,chicken stock and curry powder.
Arrange shredded chicken on bottom of 9"x9" casserole, then layer broccoli.
Pour mayonnaise mixture over the chicken and broccoli.
Layer Cheddar cheese and top with French fried onions and crumbled bacon.
Bake for at 350 degrees 20-25 minutes.
Let rest for 10 minutes before serving.

If you don’t like curry, garlic powder can be substituted and it is very tasty.

Josie's Corned Beef Hash

3 cups leftover corned beef - finely cubed
2 cups cold cooked turnips - finely cubed
1/2 cup onion - finely chopped
1/2 cup half and half
1 tablespoon vegetable oil
1 tablespoon butter

Toss beef and turnips together in a bowl.
Add onion and heavy cream and stir to combine.
Heat oil in a heavy nonstick skillet over medium-low heat 1 minute.
Add beef/turnip mixture and cook until a crust forms, about 10 minutes.
Turn hash and brown other side, about 10 minutes more.
Serve with a poached egg, if desired.

Josie's Ham and Cabbage Bake

1 pound fully cooked ham (a ham steak works great)
1 small head of cabbage - cut in small wedges
1 cup water
4 teaspoons butter
1 cup sour cream
1/2 cup shredded Swiss cheese
1/4 cup fresh parsley
1/2 teaspoon black pepper
1 cup green pepper - chopped (optional)
Dijon mustard

Steam cabbage with water until slightly wilted and soft. Drain well.
In small sauce pan, melt butter, sour cream, cheese parsley and pepper.
Cut ham in bite size pieces and mix well with cabbage.
Spread cabbage and ham in bottom of 9x9 casserole.
Sprinkle with chopped green pepper.
Pour cream sauce over all.
Bake at 350 degrees for 20 minutes.
Let rest for 10 minutes before serving.
Serve with spicy mustard.

Mexicali Ground Beef and Cabbage Pie

1 head cabbage - finely sliced
1 cup water
1 pound ground beef
2 tablespoons homemade taco seasoning mix
2 eggs
2 tablespoon cream
2 cups shredded Cheddar cheese
Salsa
Sour cream

Steam cabbage with water until slightly wilted and soft. Drain well.
Brown ground beef, add taco seasoning.
Return cabbage to ground beef and taco seasoning. Mix thoroughly.
In bowl combine 2 eggs and cream whisk completely.
Add 1 cup Cheddar cheese to egg mixture.
Pour in egg and cheese mixture in bottom of 9x9 casserole.
Spoon on the cabbage and beef mixture press down slightly to condense meat.
Sprinkle remaining cup of Cheddar cheese on top.
Bake at 350 degrees for 20-30 minutes or until eggs on bottom are cooked and cheese on top is melted and slightly crispy.
Let rest for 10 minutes before serving.

Dottie's Sausage, Mushroom, and Cream Cheese Chicken Casserole!

4 boneless skinless chicken breasts
Garlic powder
Salt and pepper
Vegetable oil

1/2 pound roll type breakfast sausage
4 ounces cream cheese - softened
1 cup shredded Cheddar cheese - divided
8 ounces fresh button mushrooms - quartered
3 tablespoons chopped parsley

Sautee seasoned chicken and cut into bite size pieces. Set aside
Cook and crumble the sausage. Drain well and let cool slightly.
Place quartered mushrooms in the bottom of 9x12 casserole.
In a bowl, mix sausage, cream cheese, 1/2 the shredded cheese and parsley well. Spoon and smooth over mushrooms and layer chicken pieces on top.
Cover with foil and bake at 350 degrees for 30 minutes,
Remove foil, sprinkle remaining Cheddar cheese and parsley on top and bake an additional 15 minutes or until the cheese is melted and golden brown.

Josie's Turkey Meatballs with Creamed Spinach and Bacon

1 pound ground turkey
1 egg
1/2 teaspoon rosemary
1/2 teaspoon oregano
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic salt
1 bag of washed spinach
5 slices bacon - cooked and crumbled
1 cup cream
1/4 cup shredded Parmesan cheese

Mix turkey, egg, rosemary, oregano, cayenne and garlic salt.
Form into small meatballs and saute. Do not over cook. Set aside.
Wilt spinach in 1/4 cup of water. Drain spinach and add bacon.
Add cream and parmesan cheese.
Simmer slowly to reduce and thicken slightly.
Pour over meatballs.

Josie's Meatball Stroganoff

Meatballs:
1 package meat loaf mix. Beef/Pork/Veal combination from the butcher.
1 recipe of Dottie's Onion Soup Replacement (located in the Soup sticky)
1 egg
2 tablespoons cream
1 or 2 cloves minced garlic
1 tablespoon parsley
Salt and pepper

Combine all ingredients in a large bowl.
Mix lightly with fingers, do not overwork.
Form into 1 inch balls and place on baking sheet.
Bake at 350 for 20 minutes.
The last minute, turn on broiler to brown meatballs.

Gravy:
1 package Schilling Homestyle gravy mix
1/2 cup sour cream
1 tablespoon Worcheshire sauce
1 cup sliced mushrooms
Salt and pepper

Boil gravy mix as directed.
Add mushrooms and gently cook for a minute or two.
Mix in sour cream and Worcheshire sauce.

Arrange meatballs in 9x9 casserole and pour gravy on top.

Cheesey Hambuger Skillet

1 lb. ground beef
1/4 onion, diced or sliced
1 can french style green beans
1 cup shredded cheese or several American cheese slices

Sautee onion with crumbled ground beef in a skillet until done, drain. Add green beans and cook for 5 more minutes on low to med heat. Top with cheese, let it melt and stir to mix the cheese in. I usually top with just another sprinkle of shredded cheese.

* This didn't sound good at all to me until I tried it then I had to make it several times it was so good!
** I also usually add seasoned salt and pepper to the meat while it cooks.

Shepherds Pie

1 1/2 pounds ground beef
1 egg
1 medium onion - chopped
1 1/2 cup shredded Cheddar cheese - separated
6 slices bacon - cooked and crumbled

16 ounces frozen cauliflower
1/4 cup sour cream
2 tablespoons butter
1 tablespoon chives
salt and pepper
garlic powder

1 (12 ounce) package frozen green beans

Cook cauliflower until tender and mash with sour cream, butter and chives. Set aside.
Cook and crumble bacon.
Brown hamburger, onion and drain.
Mix hamburger, bacon, salt, pepper, garlic powder, egg and one cup cheddar cheese.
Spread into 9x9 casserole.
Layer green beans.
Spread mashed cauliflower over top.
Sprinkle with remaining 1/2 cup of shredded Cheddar.
Bake at 350 degrees for 35 minutes.

*If using fresh green beans, they need to be precooked.

Not really a casserole, but I really wasn't sure where to put this. It is definately comfort food and I love using turkey once in a while.

Cabbage Rolls with Turkey Cheese Stuffing

1 head savoy cabbage
1 pound ground turkey
1 egg
1/2 cup chicken stock
1 teaspoon sage
1 teaspoon parsley
1 1/2 cups shredded Mozzarella cheese
6 slices bacon

On a baking sheet pre-bake bacon until it is half done. Blot well.
Remove twelve large leaves of cabbage and cut out tough inner rib.
Blanch each leaf 1 minute until pliable.
Combine ground turkey, egg, sage, parsley and 2 tablespoons chicken stock.
Add salt and pepper to taste.
Divide turkey mixture into twelve parts and form into 4 inch ovals.
Divide Mozzarella into 12 parts.
Place a turkey oval and some Mozzarella at stem end of each cabbage leaf, fold in sides and roll up.
Place rolls in one layer in shallow baking dish.
Pour remaining chicken stock over all.
Place 1/2 piece of bacon on top of each roll.
Bake at 350 degrees for 30 minutes, basting twice, until turkey is thoroughly cooked.

Baked Eggplant Casserole

I didn't measure anything...but I can give estimates.

Let's see...

1 medium eggplant, peeled and cubed in 1/2 cubes
1 can of diced tomatos (14.5 oz can)
1/4 cup of fresh grated parmasean
1 Tbsp of fresh grated parmesean (added at the end of baking)
1/4 cup of black olives
1/4 cup of sliced green olives w/pimentos
4 cloves of roasted garlic (I have this prepared ahead and keep on hand)
5 anchovy fillets (these are in 2 oz cans)
1 tsp of coarse black pepper
1/3 cup of olive oil

Preheat oven to 350 degrees

In processor or food chopper add the olives, garlic, anchovies, black pepper and olive oil and process till coarse but not a paste.

In small bowl add the above mixture to the canned tomatos and mix well. Next toss the tomato mixture with the cubed eggplant and add the 1/4 cup of parmasean.

Bake for 1 hour stirring it a couple of times. During last 5 minutes...sprinkle another Tbsp of parmasean on top.

Yummo Spaghetti Squash Casserole

Did this after Christmas with the LC'ing Parents. It was awesome.

Yummo spaghetti Squash Casserole

12-15 spears of asparagus, cooked till tender, cut stalks
into thirds when cooled slightly

1-2 cups cut up ham slices (we used leftovers from
Christmas ham)

1 spaghetti squash, cut in half lengthwise, seeds scooped
and discarded, cooked 45mins.-1 hr. till skin is tender;
slightly cool to handle and scrape strands into a med.
mixing bowl

1 cup shredded cheese (we used cheddar, but any pref-
erence will do)

3 eggs, slightly mixed with a fork

1/2 cup heavy cream

Preheat oven to 350 degrees F. In Large mixing bowl, combine cooked spaghetti squash, asparagus pieces, ham, and cheese eggs, and cream. Give a good stir to combine and coat. Salt and pepper to taste if you wish. Pour mixture into a buttered or greased (Pam spray) casserole dish. Bake approx. 20-30 mins., as everything is already cooked, you're just "warming through" and cooking the eggs.

Serves approx. 6-8 people. Sorry I haven't figured carb count yet.

We also had this the next morning as a breakfast. Enjoy!-Theresa

Cheesy Chicken Green Bean Casserole

I have no idea where I found this recipe, and would like to give the owner credit as it is DELICIOUS!!!

Low-Carb Cheesy Chicken Green Bean Casserole

boneless chicken breasts (I used 5 small ones)
1 cans french cut greenbeans - well drained
1/2 of a med. yellow onion sliced very thin and separated into rings
2 stalks celery, sliced small
2 tbsp butter

1/2 cup heavy cream
1/4 cup mayonnaise
1 cup assorted shredded cheese (I used mozz & cheddar)
3/4 tsp salt
1/2 tsp pepper
1/2 tsp. garlic powder

Brown chicken in skillet until almost done (apply seasonings as you like). Place chicken into the bottom of casserole dish and put green beans on top. Saute onions & celery in butter in the same skillet used for the chicken, until soft. Meanwhile, mix the rest of the ingredients together with the sauteed onion & celery and pour over chicken. Sprinkle with parmesean. Bake for 30-40 minutes @ 350 degrees.

Serves 4. I calculated it to be approx. 6g. of carbs per serving.

Don't know where I got this one, but I like micro! So quick and easy

Broccoli-mushroom Scallop Microwave Style

1 1/2 lb Fresh broccoli -- washed, split and cut into 2-inch pieces or
1 Pk frozen broccoli spears -- (10 oz)
2 tb Butter
1 c Sliced fresh mushrooms or
1 Can sliced mushrooms -- (4 oz) drained
1 t Grated onion
2 tb Flour substitute for thickening
1/4 t Salt
1/8 t Pepper
1 c cream
1 c Grated sharp Cheddar cheese
Paprika

Heat fresh broccoli in a deep, 2 1/2-quart, heat-resistant, non-metallic casserole, covered, in Microwave Oven 8 to 9 minutes. (Note: If frozen broccoli spears are used, defrost and place in a shallow, 9-inch, heat-resistant, non-metallic baking dish.) In a small, heat-resistant, non-metallic bowl, combine butter, mushrooms and onion. Heat, uncovered, in Microwave Oven 3 minutes. Stir occasionally. Blend flour sub and seasonings into butter-mushroom mixture. Heat, uncovered, in Microwave Oven 3 minutes, stirring after 1 1/2 minutes. Gradually add cream, stirring until mixture is smooth. Heat, uncovered, in Microwave Oven 3 minutes. Stir every minute. Pour hot mushroom sauce over cooked broccoli. Sprinkle with 1 cup cheese and paprika. Heat, uncovered, 4 to 5 minutes or until cheese is melted.

I got this off another thread, posted by Linda Sue. Not exactly sloppy joe's with buns, but it was really good. Even my kids liked it! It really had a sloppy joe flavor, so maybe you could make the filling and use it with some low carb buns or something. Hope this helps!

SLOPPY JOE PIE
1 lb. hamburger
1/3 cup chopped onion
2 stalks celery, minced
1 clove garlic, minced
1/2 cup tomato sauce
2 t. Splenda
1 T. white vinegar
1 T. Worcestershire sauce
1 t. mustard
1/2 t. salt
1/4 t. pepper
2 eggs
1/2 cup mayo
1/4 cup heavy cream
8 oz. cheddar cheese, shredded

Brown the hamburger with the onion, celery and garlic; drain fat. Add the tomato sauce, Splenda, vinegar, Worcestershire sauce, salt and pepper. Mix well and let simmer, uncovered, about 10 minutes or so just to blend the flavors. Put the meat mixture in the bottom of a greased glass pie plate. Beat the eggs in a small bowl and whisk in the mayo, cream and shredded cheese. Pour custard mixture over the meat and spread evenly. Bake at 350º for 30-35 minutes until nicely browned. Let stand 10 minutes before cutting. Makes 8 servings (4 carbs each)

Carbs per serving after fiber deduction: 3.4




2 7.06 oz Large no drain packages of Starkist premium chunk light tuna in sunflower oil
2 cups Broccoli, florets only, chopped and steamed to crisp tender
1/2 cup of sweet red pepper, chopped and steamed to crisp tender
1 1/2 cups of heavy cream
4 large eggs
2 cups of shredded sharp cheddar (8 oz)
1/2 teaspoon of black pepper
1/4 teaspoon of salt
**You can try different low carb veggies, but adjust the carbs accordingly**

Preheat oven to 350 degrees

Blend eggs, cream, salt and pepper together. Stir in the 2 bags of tuna. Next, mix in the cheese, then add the steamed chopped veggies to mixture and blend.

Using 8 disposable pot pie tins (found with the disposable roasters, pie & cake pans, etc.) Add 3/4 cup of mixture to each pot pie tin. Place tins on cookie sheet and bake for 30-35 minutes.

I like fixing them in the pot pie tins because it helps me remain more in control of my portions. Also, once they are cooled completely, you can put them in a freezer bag and freeze them individually for quick meals.

If you decide to bake in a casserole dish, you will have to adjust the baking times.

zuccini parmesan

4 zuccini sliced
1/2 green pepper chopped fine
1/2 onion chopped fine

Place in a casserole (sprayed with Pam or Buttered) with plastic to cover and steam 5 minutes on high heat in microwave

1 cup mayo
1/2 cup parmesan cheese + extra for topping
3 eggs
Black pepper to taste

Mix together and pour over zuccini mixture mixing well. Sprinkle with extra parmesan to taste. You can cook in the microwave 5-10 minutes on high uncovered till puffy. Or you can bake at 350 for 20-25 minutes.

Cauliflower-Green Bean Casserole

This is from 500 Low-carb Recipes by Dana Carpender, which I recommend!
I HATE green beans, but this is yummy!

2 bags (1lb each) frozen cauliflower
1 cup crosscut green beans
1 cup mayonnaise
1 cup butter
1/4 small onion, finely sliced
1 cup freshly cooked, crumbled bacon
1 cup shredded mixture Mozzarella and Cheddar cheeses

1. Preheat oven to 300 degrees.

2. Cook cauliflower and beans according to package directions. Drain.

3. Place veggies in a large casserole, stir in the mayo, butter, onion, and bacon and mix well.

4. Top with cheese and bake for 20 minutes.

Yield: 8 servings
Carbs: 6 grms each serving after subtracting fiber
Protein: 11 grms each serving

CHICKEN DIVAN
3-4 cups cooked, cubed chicken
16 oz. frozen broccoli florets
4 oz. can mushrooms, drained
8 oz cheddar, shredded
3 oz. fresh mushrooms, minced
1 stalk celery, minced
2 T. onion, chopped fine
2 T. butter
1 cup chicken broth (homemade preferred)
1 cup heavy cream
Salt
1/4 t. pepper
1/4 cup mayo
1/8 t. curry powder

Cook the broccoli according to package directions for 4-5 minutes; drain. In medium non-stick skillet, saute' the fresh mushrooms, celery and onion in the butter until soft and lightly browned. Season with salt and pepper. Add broth; bring to boil and reduce by half. Add the cream and boil on medium heat until slightly thickened and reduced. Gradually whisk in the mayo until well blended. Stir in the curry powder.

In a greased 9x13" glass baking dish, mix the chicken, broccoli and canned mushrooms. Season to taste. Mix in the cheese. Pour in the mushroom sauce and mix well. Cover with foil and bake at 350º for 30 minutes. Uncover and bake another 10 minutes until bubbly and a little browned on top. Makes 8-10 servings (8 servings - 5.5 carbs each) (10 servings - 4.5 carbs each)

This makes a lot and has almost the same flavor as the non-lowcarb version that I used to make. Very tasty.

MUSHROOM CHICKEN AND SAUSAGE CASSEROLE
4 cups cooked chicken, cubed
1 lb. pork sausage
1 stalk celery, chopped fine
1 T. onion, chopped
1/2 lb. mushrooms, sliced
8 oz. cream cheese, softened
16 oz. bag frozen cauliflower, cooked well and drained
8 oz. shredded cheddar
Salt
1/2 t. pepper
Paprika (optional)

Brown the sausage with the celery, onion and mushrooms. Stir the softened cream cheese into the sausage mixture until well blended. Coarsely chop the cooked cauliflower. Mix all ingredients and spread in a greased 9x13" baking dish. If desired, dust the top with paprika. Bake, covered with foil, at 350º for about 30 minutes. Uncover and bake until hot and bubbly and top is lightly browned, about 10-15 minutes. Makes 8-12 servings. (8 servings - 6 carbs each) (10 servings - 4.5 carbs each) (12 servings - 4 carbs each)

This is based on Dottie's Sausage, Mushroom and Cream Cheese Chicken Casserole. This is a favorite. It tastes like chicken and dressing.

CHEESY SPINACH BEEF BAKE
2 pounds hamburger
1/2 cup chopped onion
2 eggs, beaten
10 oz. package frozen, chopped spinach, thawed and squeezed
4 oz. can mushrooms, drained
8 oz. cheddar cheese, shredded
1/2 tsp. garlic powder
Salt and pepper, to taste

Brown the hamburger and onion; drain fat. Mix all ingredients in at least a 2-quart greased casserole. Bake, uncovered, at 375º for 25-30 minutes until hot and bubbly. Makes 6-8 servings (6 servings - 5 carbs each) (8 servings - 4 carbs each)

lasagna type zucchini casserole

Here is an oldie my mom and gramma used to make:

Basically in a large casserole dish, you layer zucchini slices, your favorite cheese and diced herbed tomatoes ..over and over again...until your dish is almost full.

You then fill up half empty space in the dish with tomato juice and then sprinkle a generous portion of cheese on top.

Bake in oven at 350 F for 1-1.5 hours...depending on the thickness of the zucchini.

Mom used to layer any other vegetable she had in the fridge.

You can spice it up as you please...mom was a garlic girl.

The flavors blend well - and it tastes even better as a leftover.

Yummy Mexican casserole

1 cup onions
1 1/2 lbs ground meat
1 package taco seasoning
1 package frozen califlower
2 - 3 tbs heavy cream
1/4 stick butter
1 - 2 cups cheddar cheese
scallions
Salt & pepper to taste

brown ground meat with copped onions, drain and add the taco seasoning (I use less water then it suggests on the back of the package).

Boil califlower until very soft and drain. put in mixing bowl with butter, heavy cream, and salt and pepper to taste and mix with an electric mixture (if you can afford the carbs you can also use sour cream instead of the butter and heavy cream). Be careful, I always splatter this all over the kitchen!!!

Put ground meat mixture in bottom of casserole dish and press down with a spatula to for a solid layer on the bottom. Spread califlower mixture on top to form second layer. Completely covering ground meat. Then form the third layer completely covering the cauliflower using cheddar cheese.

Bake at 350 for about 20 - 30 minutes making sure not to burn cheese. Chop scallion and sprinkle on top.

This is delicious and fun! I have never had any leftovers with this one. Enjoy!!!

Cheeseburger Pie

1 lb. ground beef
1 cup chopped onion
1 cup shredded cheddar cheese
1/2 cup cream
1/2 cup water
2 eggs

Dilute 1/2 cup cream with 1/2 cup water.
Brown and drain beef; spread in bottom of greased pan; sprinkle with cheese. Stir remaining ingredients and pour into pan.
Bake at 400F degrees for 25 minutes.

(I mix all together rather than topping with remaing ingredients.) I also add salt/pepper/garlic salt. I also add about 1/2 cup extra cheddar cheese. I also bake it in big iron skillets. I just love the flavor.

I have to make 3 of these in order to have any to freeze, because everyone loves it.

Soy "Corn" Chip Casserole (this is a conversion from the classic Dorito Pie Casserole)

1 lb. hamburger meat - 0 net carbs
1/2 tsp. garlic powder
1/2 to 1 cup of Dottie's Cream of Mushroom Soup - unknown net carbs
Rotel Original - 9 net carbs
1 cup of shredded cheddar (you can also try Mexican blend and other blended mixes) - 4 net carbs
2 oz. (about 30 chips) Carbsense Soy Tortilla Chips - 16 net carbs
Salt and pepper to taste
Sliced mushrooms and onions to taste (I like lots of mushrooms and a little onion)


Preheat oven to 350 degrees F.

Brown hamburger meat in a large skillet or dutch oven. When meat is almost done, add sliced mushrooms and onions and cook until tender. Drain grease, add garlic powder, salt and pepper to taste.

Add Dottie's Cream of Mushroom Soup and Rotel to mixture, stirring until completely mixed. The cream of mushroom soup should be fairly thick, so if yours is creamier, add it a little at a time to keep the mixture from getting too wet.

Layer half the chips in a 9" or 10" baking dish. Spoon half of the hamburger meat mixture evenly on top. Add half the cheese, another layer of chips, hamburger meat mixture and then cheese. If you have any left over, keep layering until you use it all.

Bake in the oven for 20-30 minutes, or until top layer of cheese is nicely golden.

Makes 6 servings of about 5 carbs each. I'm not sure of the carb count of the cream of mushroom soup, however, and the total excludes the onion and mushroom you add.

Notes: You can replace the hamburger meat with chicken to make King Ranch Chicken. Also, I found when I made it that I could use fewer "corn" chips and it still taste great. My personal preference is to use Velveeta in place of cheddar cheese, but Velveeta has sugar in it and the carbs are higher (3 per ounce instead of <1 per ounce). You can also leave the mushroom and onion out for a plainer casserole and it still tastes great.

Ground Beef Artichoke Veggie Casserole

Quantities are estimates... all to taste.

1 1/2 pounds ground beef, browned (seasoned w/salt and pepper)
1/2 cup tomato sauce or lc spaghetti sauce
jar marinated artichoke hearts, cut into quarters
sauteed sliced mushrooms
sauteed bell pepper strips (I used green, orange, and red)
cooked spaghetti squash

Mix all together. Bake at 350 degrees for 45 minutes. Sprinkle with greated parm. cheese. (This is good with or without the spaghetti squash.) Better than a casserole w/pasta!
