Need your BEST low carb quiche recipes

OK for me breakfast is the hardest meal of the day - and if I eat another cheese cube for breakfast I am going to be

So I thought ooooh quiche is good and I can make it on sunday and then just cut a serving in the morning and reheat it at work - but I want the really scrumptious bestest low carb quiches - the kind that when I reheat and my coworkers come into my office I can say so sorry it is diet food

I am partial to crab but love most fillings

So bring em on - what are your faves

This is a frittata rather than a quiche, but it's soooo gooood - even DH, who normally is NOT into this type of dish, really loved it.

Artichoke and Bacon Frittata


Ingredients
7 large eggs
1 cup of heavy cream
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup Monterey Jack cheese, grated
3 to 4 slices crisp cooked bacon, crumbled
1 cup artichoke hearts, chopped into chunks

Preheat oven to 400 degrees. Grease a 9 inch pie pan. With wire whisk, beat eggs, milk, butter, salt and pepper until well mixed.

Sprinkle artichoke hearts and crumbled bacon on bottom of pan, then top with the monterrey jack cheese. Pour egg mixture over the artichoke and bacon. Sprinkle cheddar cheese evenly over top.

Bake 20-25 minutes or until set and golden brown.

I had to tweak - I added about 1/2 cup chopped red and yellow bell peppers, 1/4 cup sliced green onion, about 1/3 cup cubed up Canadian bacon that I had which needed to be used, and I used a preshredded Trader Joe's Swiss and Gruyere cheese, probably about 2/3 of the 8 oz. bag.

i don't follow recipes but i really like chicken, spinach, a little onion and jalapeno havarti

bacon and swiss is also a nice flavor combo for me (and Dawn posted a recipe for that)

I don't have a specific recipe, I tend to fill the bottom of a large rectangular pyrex casserole dish with something like chopped spinach or broccoli, then a bunch of grated cheese, and top with a mixture of beaten eggs and cream, with some salt, pepper, and whatever seasonings suit.

I do recommend the rectangular dish rather than a round one. When you don't have a crust it just seems to hold together better.

Oh, and lots of people seem to make this sort of mixture in muffin cups of a muffin pan and microwave them. Or you can make it cream cheese, eggs, flavor, and sweetener for mini breakfast cheesecakes. Of course I'm terribly partial to flax muffins, myself.

I'm not exactly sure what the difference is between a quiche this Greek Feta & Olive frittata but this is one of my favorite recipes and has been awesome every time I made it (leftovers too.) Sometimes I add a little spinach to mine, asparagus is good too.

Thank you all - I love to cook and this is so inspiring - in fact I showed the recipes and pictures to my boyfriend and his mouth was watering - and he is a body builder and does not need to lose weight but is hungry in the mornings after his workouts yummmmmy

My fave is bacon, cheddar, chive. I don't really use a recipe. It is just eggs, cream, a dash of hot sauce and the bacon, cheese, and chives.
