Fellow Chia-ites…are you still gelling?

Hi fellow chia gel users…

Just wanted to let you know that Chia has become a regular part of our diet. I use it for Chia Fresca and for stretching yogurt, sauces, and salad dressings.

Just wondered if others of you are still ''using''...

I have been putting 1/2 an ounce a day into some of my foods. So far I have tried mixing the gel or seeds with chopped meats (very good) and muffins (not as good in the quantities I am trying to use). I am continuing with the chia experiment, because I think it is helping keep me extra low-weight and extra high energy.

Seems there is some controversy over the benefit of chia seeds now. I normally wouldn't get too excited over it, but whenever David Mendosa says something, it's worth listening to. However, he himself hasn't decided what he thinks, and he is just discussing the controversy at this point.

So far this is the only recipe I have used them in and they were pretty good I used the heavy cream in mine. I found the recipe in the June issue of the Better Nutrition magazine:

Kat’s “Impossible” Flourless Waffles Serves 4

5 medium organic eggs

1/2 cup organic heavy cream or full-fat unsweetened coconut milk

51/2 Tbs. organic butter, melted and slightly cooled to warm

1/3 cup ground chia seeds or Salba

1/4 tsp. sea salt

2 tsp. nonaluminum baking powder

1.Combine eggs, cream, and butter in bowl with whisk or hand mixer.

2.Combine chia seeds, salt, and baking powder in separate bowl with fork. Gradually whisk into egg mixture. Allow batter to sit 30 minutes, stirring occasionally.

3.Pour dollops into well-heated and buttered stove-top or electric griddle or waffle iron (follow waffle iron directions; some do not require greasing). Fry pancakes until bubbles form at edges, flip, and cook until golden brown on bottom.

I mixed up some gel last week for the everything bagel recipe, but then I never used it for anything else, so I feel it was kinda wasted. How long is the gel good for once it's mixed?

Not sure - at least a couple three weeks. I've never had any break down, but the I use it up within a week usually...though I have gone 2 weeks plus a couple times (because I mix a couple quart jars to take in the RV for trips).

Great Thanks Larry. I actually tasted it after it was mixed and gelled and to me it tasted like nothing but it was good ya know? lol I mean that I was surprised that I could eat a spoonful and have it go down so well.

I just need to figure ways to sneak it into different foods that I normally eat. I actually just made the banana split cake and I ended up mixing up some instant pudding with almond milk to mix in with the whip cream on the first layer to make it go further, so I probably could have just added some of the gel to the whip cream make it go further instead of using the pudding?

I don't drink diet sodas nor do I eat much yogurt, so that leaves those two out. I would probably try it in a meatloaf or in salad dressings though.

I am still eating, and loving, the chia jello popsicles. I also put a tablespoon in the meat I was using for meatballs recently and thought it really did make them more moist. I also used about a cup of the gel in a strawberry smoothie the other morning and liked it a lot.

I love Chia!!! The only problem that I have with it is making a large bottle of chia fresca to drink at work, I also slice up some limes to go in it. It does look a bit strange...I spend so much time explaining to people what I am drinking. I have not convinced a single person to try it.
I wanted to make popsicles, could not find any for sale anywhere. Still looking.
I am looking forward to trying more recipes, right now I mostly drink it or put it into yogurt or smoothies.

Boy I don't try to get others to try it. I'll offer it if they happen to be at our house when I'm making some, but it's like coffee to me - far to precious to waste! So if they aren't explorers, I don't give it to them.

I probably have 2-3 Chia Fresca a day most days - sometimes more.

i've only tried it as a pudding so far and loved it! i found myself eating a spoonful several times as day. i plan on trying it in some meat soon...my next experiment will be to make "jelly" out of it with some blackberries sweetened with erythritol i have in the fridge.

that reminds me...i need to make some more pudding tomorrow!

I've been adding a couple of tablespoons of the gel to my water mugs a few times a day...I also add a few drops of flavored liquid stevia....peppermint this week...very refreshing...I freaked a few people out when they saw it but too bad!

Haven't had much of a chance to try other stuff with it yet because I had out of town company off and on the last few weeks....no more till Labor Day weekend so now I can experiment a bit more! I do like the chia tapioca but haven't made it lately...

Yes I do as well...and I have plenty of seeds on hand & a quart & pint gelled in the fridges around here, working out of the RV this week (kitchen/family room remodel) so I have a jar out there with me during the day.

Larry or anyone...have you used Salba seeds? I'm just learning about them...not sure yet if its just the regular white chia seeds or something even better...also, is the ground seed more beneficial or convenient?

Salba is a brand name and not a specific or better seed.

I buy my Chia as generic as I can get it. It has no natural pest enemies, so none of it is ever treated or sprayed for insects.

In other words, it's all organically grown.

No benefit to the expensive over the cheap...and I get mine on the internet for around $5.50 pound.

I mix some (don't measure, just dump)with a container of dark chocolate protein drink and it becomes chocolate pudding. I also mix the seeds with 1 container of raspberry, strawberry, or lemonade sf drink mix, about 16 oz. or so of water (taste it to see if it needs more water, I like things sweet and strong), and using my hand blender, add about 3 tsp. of guar gum. Mix this real good and it ends up thick like pudding. This could be spread on bread-like items, but I like to eat it like pudding.
I add it to ground meat along with spices, etc. let that sit a while then make hamburger patties or meatloaf. It's very moist.
I make a jello salad and add the seeds to that. My family thinks I'm weird! LOL

i just discovered chia seeds this weekend and am in <3

i take a 7.5mL scoop of seed, add about 6 x 7.5mL coconut milk, and 2 x 7.5mL almond milk.... and it is absolutely delicious.
