Bluffin' Muffin
 
I just made this today....

It tastes AMAZING....like a spice cake!

2 tablespoons flax meal
1 scoop (20 grams) vanilla whey protein
1 tsp pumpkin pie spice
1 egg
sweetener (packet splenda, for example)
1 teaspoon butter

Mix together and microwave for about 1 minute

Nutrition information:
Calories 265
Fat 16.8
Carb (NET) 1.8 (5.8 before fiber)
Protein 22.6
Fiber 4 (already subtracted from carb count!)

Eat with cream cheese sweetened with splenda or eurythritol!!

WOW; its like a pumpkin bar (sans pumpkin)--or a really amazing spice cake. I felt like I was cheating and eating a cake!

Sounds really good. And with a whole scoop of protein powder plus the egg, it can be used as a meal.

I had it for lunch today...not hungry yet! And it is almost dinner time....

I am pleased because it was so delicious....I would love this as a breakfast!

Wow very similar!!

I have to invent things without Davinci:( I can't buy any sugar free syrups here....

And pumpkin is also hard to come by. Hence the vanilla protein powder!

I can imagine this one would taste amazing, tho!! If only I had pumpkin!!

Made this this morning with a few tweaks. I left out the butter, so I could spread it on the finished muffin. Also I sweetened it more and added baking powder. It was very good. i will definitely make it again. It seems to be a cross between the OMM and Ms Woods' whey protein cake. I like it becuase it's quick, tastes delicious, and has enough protein to keep me going until the next meal. Thanks for the recipe.

I forgot to add that I added quite a bit of Davinci's caramel syrup. Otherwise it would have been too dry, I think.

I made one this morning, following the original recipe, then cut it in half and toasted it in the toaster and ate it with cream cheese. It was delicious and easy. It was cruncy and had just the right texture after toasting. It really hit the spot.

I think I will try the "Everything Bagel" recipe using this method.

Yum! I made the original recipe and for sweetener I used Torani Pumpkin pie and one splenda packet. I did over cook it a bit, but will know for next time (which will for sure be tomorrow!) Thanks for sharing!

This is soo-o-o-o good! I made it yesterday afternoon for snacks. I followed the original recipe except that I tripled it and nuked it for 3 minutes in a 1-qt. Corningware baking dish sprayed lightly with butter-flavored spray.

I had half of an 8-oz package of cream cheese and I mixed it with what I estimated as about a quarter of a cup of DaVinci's Pumpkin Pie flavored sugar free syrup, then whipped it until it was nice and fluffy. Rather than a sweet frosting it made sort of a sweet-tart one.

My husband is on a very high protein diet, and has to eat at least three meals and two snacks a day. I cut the cake in four square pieces, and he liked it so much I was lucky to get one piece myself before it was gone!

I should have mentioned that I cut the cake in quarters, then cut each quarter into two slices, toasted them, and then spread them with the cream cheese icing. It was delicious and very, very filling. :rolleyes:

Bringing up this old thread to ask a question.

I made this yesterday and today, and loooove the flavor, but it was very, very dry. What can I do to improve that? Sub the butter for coconut oil? Add some other kind of liquid?

I have not yet gone down the rabbit hole of coconut oil, so if I do decide to take that plunge, which brand does NOT taste like coconut? I really, really hate the flavor of coconut...

I tried the muffin tonight with coconut oil instead of butter, and it was a big improvement in moisture. :)

Yeah, I finally got on the CO bandwagon! I ended up buying Spectrum Organic CO (not the virgin). I am very happy to report no coconut taste. :D

The OP used splenda but many people use DaVinci syrup which adds moisture. A little bit of canned pumpkin would help too.

When I first tried CO, I got the Spectrum Refined, Expeller Pressed version. No coconut taste at all. I don't like coconut either.

I thought about adding the canned pumpkin - I'll def. try that next time.

@Watcher513 - that's the kind I got, too. I was very happy to NOT taste coconut. :D
