Okay, so not actually a bagel, but the toppings will remind you of one. This is a take-off of the savory sandwich/muffin recipe posted by Gary, (Scorpgc), awhile back, which was, itself, a tweak on the OMM.
Both of my DDs, who were huge bagel fans, really like these toasted with cream cheese. I like them best hot out of the oven with nothing else. (But I never cared for cream cheese on bagels anyway.)

Flaxbread "Everything Bagels” Makes 6 bagels.

Dry: Mix these together (I keep bags of the dry ingredients mixed up in the fridge so it’s easy to put together a batch.)

½ cup ground flaxmeal (I prefer golden)
¼ cup almond flour
1 ½ tsp. baking powder
1/2 tsp. dry ranch powder
1/4 tsp. each garlic and onion powder
2 T. parmesan cheese (green can)
a pinch of salt

Wet: Mix these together:
2 eggs (I use jumbo)
2 T. Chia gel, optional. (If not using, replace with more oil. To make gel, mix ¼ cup chia seeds with 2 cups warm water. Stir, then let sit until thick. Store in fridge to add to lots of things. This adds good omega 3s.)
2 T. oil
½ cup shredded cheddar
Preheat oven to 350. Add dry ingredients to wet, stirring to blend. Let sit for 5 minutes. Divide batter evenly into a greased or sprayed muffin top pan.

“Everything” Topping:
(I don’t measure, but just sprinkle on a little bit of each of the following:
dehydrated onion and garlic flakes, kosher or sea salt, poppy and sesame seeds.
Bake in muffin top pan at 350 for 12-14 minutes.

The basic bread is 1 carb per bun. I don't know if the toppings change the count or not. The sesame seeds are net 0, but I know the onion and garlic can add up, depending on how much you use.

This caught my eye as I have always loved the "everything" bagels. Made these this morning and they are WONDERFUL!! So good, big enough to cut in half, and yummy spread with cream cheese w/chives. Absolutely loved them....Thanks!!!

I have the Wilton mini-cake pans. I'm guessing it will work in those too?

This was so good for breakfast, I used one for lunch! Sliced it in half and had a roasted chicken, cheddar, avocado sandwich. Small, but yummy!! I was also thinking that next time instead of the "everything" topping, I will add grated cheddar and jalapeno slices to the top, like another favorite bagel I've been missing. Love this recipe...

:clap:I'm so glad you like them! I'm thinking of trying asiago cheese in the batter, (probably a cup of it), with a little more sprinkled on top, because those were my favorite bagels from Panera Bread back in the day. I loved them toasted with butter. I've never heard of a jalapeno bagel, and I'm not a big jalapeno fan, but one of my DDs is, so I will mention that version to her. Are there any jalapenos in the bagel itself? BTW your sandwich sounds yummy!

It should work fine. Actually, if someone wanted to try these, but didn't have the right pan, I bet you could just put the batter on a parchment covered baking sheet, like you would with oopsie rolls. The batter is pretty thick and I have to coax it to fill in the muffin top circles anyway. I use the pan because I have it, and it helps me make uniform sized "bagels".The openings in my pan are about 4 inches across by 1/2 inch deep.

Hey, I just had an idea!! What about baking these in donut molds, for the real bagel experience?? I had bought some for making the oopsie donuts. I went and bought a couple Ing. I needed to make these today, it's suppose to be cooler Friday, so I will try making them then!!

I get six "bagels".

I tried an asiago cheese version yesterday, putting 1 cup cheese in the batter, (omitting the cheddar, of course), and topping with another 1/2 cup cheese. I baked them longer, for 17 minutes. When I tried one, I first toasted it whole on the bagel setting of my toaster, (which just toasts one side), so the cheese wouldn't melt and drip down the inside of my toaster. It was a little crunchy on the outside, but fluffy on the inside, very good with butter.

Gina, donut molds sound perfect! I didn't know such a thing existed! Did you try them yet? Thank goodness the humidity has finally broken here along the coast. I don't mind turning on my oven now. I hope it's better inland as well!

Do these stick a lot? I was thinking that these would need to be greased really well.

It has cooled down here too, and I was planning on making them yesterday but never got to them..so hopefully I will get around to making them sometime today. I can't wait to taste these!! I think they would be like the real thing made in the donut pan too!!:kicking:

I spray the pan with cooking spray, even though it's supposedly nonstick, and they come right out when I slip a knife under them. I would remove them to a rack right away, as otherwise, the bottom could get soggy.

If you try these, just remember that I said "bagel" because if you are expecting the chewy texture of a real bagel, you will likely be disappointed. It's the stuff you add to it, like the everything toppings or different cheeses that will make it feel bagel-ish. I am really liking the asiago version.

I just took them out of the oven and they popped right out and look adorable!!! I will let you know how they taste, I am going to let them cool a little bit then toast one and put some cream cheese on it. I know they wont be like "real bagels" but they will be great for a bread type thing to put things on. These look so cute and came out looking just like a real bagel. Thank you so much for posting this recipe!! I can't wait to try one! I wish I had a camera so I could show everyone what they look like.

These are very good!! They taste like a savory OMM and toast up nice & are great with cream cheese. They would be great with the pizza dip recipe you posted too!! Thanks again for the recipe!!

Nutrion informaion for Everything Flax Bagels
 
I just made a batch, but I baked mine in a mini muffin tin and got 16 for the recipe. How do you calculate the nutrional information and calories? I don't have any software that does this.

I found a recipe calculator and put in the recipe - this one omits the count of chia gel and used only 2 T of olive oil. Hopefully this is right.

Cathy...thanks! My diabetic friends and family are enjoying this treat with a bit of cream cheese as we speak.

Flaxmeal has never bothered me. I ate two of these yesterday, one in the afternoon and one last night. You need to drink a lot of liquid while consuming it though because of all the fiber. I always drink a lot of water so maybe that's why it doesn't bother me.

Do other high fiber foods bother you, or is it just flax? Have you tried small amounts first? There is only 1 1/3 T. of flax in each "bagel". You could even switch the proportions of almond flour and flax. Then there would only be 2 tsp. of flax in each.

Glad you like them and you found a recipe calculator. I don't have recipe software either, so I was figuring flax as a net 0, almond flour as 3, ranch powder as 1, parm as 1, eggs as 1, and cheddar as 2. That's 8 divided by 6 servings = 1.33 carbs, which rounds down to 1. With the toppings they may be closer to 2, but I never have more than 1 a day, so I don't stress over it.

I made these again for the week and made half with the jalapeno/cheddar topping like I used to buy. SO good!!! I really love this recipe.
