Of course I don't mind that you copied the recipe. I'm thrilled that you enjoy them! I came up with them as a tweak of Scorpgc's savory sandwich buns. Ouizoid then tweaked my "Everything Bagel" to make an English muffin variation that uses oat fiber and unflavored whey protein instead of the almond flour. There is a huge thread about them, and they are delicious, too! Others have tweaked her tweaks by adding wheat bran or other ingredients, and trying different cheeses. There's even a pizza crust based on the English muffin version that I want to try. The recipe is very adaptable. You can certainly replace the chia gel with oil or yogurt as you found out, and increase or decrease the toppings or spices added. Thanks for trying them!

You're welcome! I need to get back to making these myself. I kind of fell off the wagon for the past year, not with sugar, but with popcorn, light bread, and an evening cocktail. Between that and an achilles injury that keeps me from walking, I have gained everything back and then some! I'm now back on track and determined to fight the menopause middle!

I think I'll try adding a little glucomannan to make them even more bread-like, as people have had good results with it.

I finally got my muffin top pan. And this was at the top of my list. OMG are they ever good!!!!! I actually followed the recipe (unusual for me, lol) except I didn't have any ranch powder so I just used 1/2 tsp onion powder & 1/4 tsp garlic powder.

I really need to try these! I bought a muffin top pan a couple weeks ago, and it needs something to do.

I looooove Everything bagels, so anything that approximates it is going to be OK with me!

P.S. My sister has started calling me a hippie, what with all the flax, whey powder, chia seeds, almond milk, etc. in my kitchen now. I went from never cooking to having a fully-stocked "treehugger" kitchen. Haha! Diabetes has certainly changed my life around...

Thanks for posting this recipe Cap57 and thanks to whoever bumped the thread (haven't gone that many pages back yet)!

I used to love the Everything Bagel from Einstein's. I liked it toasted with butter (no cream cheese). Oh yum!

And for the first times that I can recall, I already have all the ingredients. This never happens for me with baking recipes.
