Yes, you can tell if it's still good by smell. Once I didn't bother to smell it and whatever I made with it ended up in the garbage, but as long as it smells good, you're fine.

yeah mine is way outdated. It still smells and tastes good, however, it was stored in the freezer until I opened it recently.
I am finding it hard to use it up quickly. Any recipe ideas?

Yep, me. Mine says "expired" a year ago but they are unopened. No way freeze-dried food goes bad that quickly, how the heck could it? No water in it! I opened one up just now and it's as fresh smelling and tasting as the day I bought them. They need to re-think those dates.

Yeah, expiration dates have to be taken with a grain of salt. They are needful on some items, but rather ridiculous on others. I mean really... an expiration data on a bottle of water? I think this is one reason more labels are going with a "Best if used by:" marking.

When in doubt just use the old sniff and taste test, if it's funky throw it out.
