Here is another easy, but tasty recipe I had saved a while back from recipezaar.

I thought I had posted the Chicken Lazone recipe before, but it turns out it was this one. Perhaps the reason it didn't catch on is because being fairly new here and not knowing any better I posted the recipe in someone else's recipe thread!! Sorry for that!!

Anyways this recipe is delicious and, just like the Chicken Lazone recipe it doesn't heat up the whole house since it's cooked on the stove top. My whole family loves this one too!! It's suppose to be served with pasta, but I think just like the Chicken Lazone, it would go well with Zoodles.

Creamy Cajun Chicken

Ingredients

2 boneless skinless chicken breasts, cut into thin strips
2 teaspoons cajun seasoning
2 tablespoons butter
1 thinly sliced green onion
1-2 cup heavy whipping cream
2 tablespoons chopped sun-dried tomatoes
1/4 teaspoon salt
1/4 teaspoon dried basil
1/8 teaspoon ground black pepper
1/8 teaspoon garlic powder

Directions

Place chicken and Cajun seasoning in a bowl and toss to coat.
In a large skillet over medium heat, sauté chicken in butter or margarine until chicken is tender, about 5 to 7 minutes.
Reduce heat add green onion, heavy cream, tomatoes, basil, salt, garlic powder, black pepper and heat through.

I'm sorry!! I don't know...maybe you can flip a coin...lol I made the Lazone again tonight for my brother and he say's to me, this is low carb??? Well I don't feel bad for you anymore if you can eat like this..lol. I like to change things up once in a while otherwise I get tired of the same old food too. Glad you like!!:kicking:

I don't have a carb count, but I think the only thing that would be carby is the sun dried tomatoes, in which case if they are really high maybe could be cut back on the amount.

I just looked it up...for 1 piece (2g) of sun dried tomatoes it is 1g carb and 1g sugar, I think you only need a few pieces for 2 tbsps. There are 3.3 g carbs in 1 C whipping cream.

Would Zatarain's 'Creole' seasoning work? I love the stuff, put it
into my v-8 juice and eggs, and ...... on an on.

Love the sound of this recipe. I've gotten very tired of chicken
lately and this would give us some zip. What do you like serving
it with? Would mashed cauliflower be good?

Hi Barb

I serve it over low carb pasta called Carb Nada, but it would be good over cauli mash too. I have never used the Zatarains, but I would think any of your favorite Creole/Cajun seasonings would work.

I have used this homemade recipe that's really good.

Creole/Cajun Seasoning Mix

Ingredients
1 tablespoon onion powder
1 tablespoon garlic powder
1 tablespoon dried oregano
1 tablespoon dried basil
1/2 tablespoon dried thyme
1/2 tablespoon fresh ground black pepper
1/2 tablespoon white pepper (or 2 use tablespoons black pepper)
1 1/2 teaspoons cayenne pepper
2 1/2 tablespoons paprika
2-2 1/2 tablespoons seasoning salt (I use Hy's seasoned salt for this but Lawry's is good also!)

Directions

Mix all ingredients in a glass jar.
Store in the refrigerator to keep the spices fresh.
Shake the jar before using.

Julie, I use the ones that come packed in oil, so I don't soak them first.

Ginaaaaaa!!! Excellent recipe! I gave your 2 recipes to my dh and let him decide and this is the one he chose! :clap: Since we had already had our Dreamfields for the week, I put this over shredded cabbage! I also used already cooked and shredded chicken. Just put it in a baggie with the Cajun spice and shook it up, put it in the butter and heated it up, then added the rest! Excellent!!! Thanks, again, for posting this! The Chicken Lazone is the next experiment!

Just a note: I do hate to cook and do what I can to minimize the experience. :D I poured my little jar of dried tomatoes and oil into my Ninja and chop-chop! They all fit nicely back into the jar. Now, it's easier to measure out and not have to chop. I think if I subbed 1 TBsp chopped for 1 dried tomato, I'll be alright in recipes. dianne

Wow great pic Dianne!! I am glad you like the recipe, and thanks for the tips on using the pre-cooked chicken and using the ninja for chopping the tomatoes.:kicking: It looks yummy over the steamed cabbage, very creative!!:up:

Sounds delicious. I bet it would be really good served over steamed asparagus. I've been subbing asparagus for pasta quite often lately. Just peel it into pasta-like strips with a potato peeler and steam just to soften them slightly.

Just finished having this for lunch, and its another great recipe to keep!

I didn't find that 2 tsp of cajun seasoning was nearly enough to coat the chicken, so I probably used at least 2-3 Tbs. That made mine really zing with spice and heat, but perfect for my palate!

I made this last night - very good, although I should have put it over something more substantial than baby spinach...maybe I'll try the cabbage next time!

I love quick and easy recipes too, the simpler the better I say!! I have not tried to freeze this, and I'm not sure if you can freeze things with cream in it or not. Maybe someone else knows if you can.

Glad you liked it!! I always taste to see if more spices are needed too, everyone's taste are different.

Yes, I think it would be delicious over cabbage too!! I have been using Al Dente Carba Nada pasta for these types of dishes because it's the only pasta I have found that doesn't spike my BS, but it is probably too carby for most here.

I've used both - for frozen I defrost them in a bowl of water and then peel and steam.

Made this one for the second time today only I added some raw, peeled shrimp into the chicken and sauce for the last 4 minutes. Wonderful! Cajun Chicken and Shrimp!

Eventually I want to try this with beef, too, or pork, or...

I made this tonight for dinner and it was really good!!! :clap:

After the chicken was cooked I removed it from the pan and made the sauce. I added a small cube of cream cheese very small like half an ounce to the sauce and it made it thicken up quickly and nicely!
It was very delicious! Thanks Gina for the recipe!
