Homemade protein bar that doesn't require refrigeration?

I'm looking for things to pack for hiking and backpacking trips. I would like to be able to pack some protein bars in addition to just nuts and pepperoni. The store bought LC bars have sugar alcohol and I was hoping to find some recipes that don't use them. So far I've only found ones that are either frozen or refrigerated. Any baked ones that can keep for a few days on the trail?

LUV, you can play around with this recipe and try different variations of it. This is my tried-n-true protein/cookie/bar/ball (call it what you will) recipe. It's a keeper. Hope ya like it. (My son fights me over these)

(Have fun hiking!)

protein balls

4 scoops chocolate whey protein
4 Tbs nat PB
1-2 packets of Splenda
1 tsp vanilla
1/2 cup of milled flax
3-5 Tbs of water

Mix all the above -- it will seem too thick, but keep stirring -- until completely mixed sufficiently. If you need to, add the water a little at a time. You want it to be thick.

Divide into 5 separate wads of dough. (Like that word, "wad"?) Roll each into a ball, wrap in plastic wrap, and store in frig.

Very filling and FUN TO EAT 'cause it hits the sweet spot, for one; and two, it's a good, quick, balanced mini meal of protein.

(Optional: You can add 2-3 Tbs of Fiber One to add fiber/carbs to the mix also.)

Ooh, thanks, Twyla! I'm making up a shopping list to go to Trader Joe's with later, as I'm out of their natural PB with flax seeds (love the crunchiness!). Will definitely make it tonight!

I used to make some just by mixing up vanilla whey protein and Teddie's chunky Peanut butter. (That's the kind made with only ground fresh peanuts.) You can roll it in chopped almonds. Then wrap it in foil and you're done.

almond butter or peanut butter
coconut oil (optional)
powdered erythritol
unsweetened cocoa powder (optional)
vanilla
possibly a DROP or two of water, but go SLOWLY if you want a bar and not a bowlful

experiment with proportions. heavenly.

Have you looked at Jennifer Eloff's Microwave Dry Cereal thread farther down the page? I make several batches at a time using the oven. As I dry the mixture I break it up to make flakes. I have eaten this for the most part as cereal w/cream but as a dry snack to nibble on once. I would think one could dry this as bar shaped or small nuggets. I use DaVinci to flavor instead of the water called for. It is high in protein and low in carbs. This might work for you.
