chilled cucumber salad

Searched but can't find the recipe. Is it simply cukes and mayo chilled seems to be something else I am missing. Thanks

My recipe is at home but I think its a ratio of 3:1 sour cream and mayo. Slivers of red onion, s & p and some vinegar. I think thats it.

You are missing vinegar!

You need a little splash of red wine vinegar or white vinegar or something to add a little tang.

Also need salt and pepper.

And I highly recommend fresh dill (Yum!)

Start Date: January 19, 2002 -10 1/2 YEARS ON ATKINS
This is my recipe and EVERYONE loves it.

4 cucumbers thinly sliced
1/2 cup chopped onion
1 cup Dukes mayo
1/4 cup Splenda
4 tsp vinegar
1/2 tsp salt
1/2 tsp dill weed

Combine all ingredients. Let sit 1 hour in refrigerator. Serve chilled.

This is my recipe too! (Helmans instead of Dukes & only 2 pkts of Splenda). I can eat an entire bowl of it!!

Here is another recipe I use that uses sour cream. I posted this over on Diabetes Daily a few weeks back.

CUCUMBER ONION SOUR CREAM SALAD
4 med. English cucumbers (no seeds)
1 thinly sliced small red onion
1 1/2 c. dairy sour cream
1-2 sm. clove garlic, minced/smashed
2 tbsp. salad oil
1 tsp. salt
2 t. diet sweetner
1-2 tsp. white wine vinegar
2-3 tsp. dill weed
Pare cucumbers and slice thinly into large bowl. Stir together remaining ingredients except dill weed; pour over cucumbers and toss lightly. Sprinkle with dill weed. Cover and chill. Just before serving, toss carefully. 8-10 good servings

Yummy..I would have to cut it down for the 2 of us as it probably wouldn't last more than a day or two in the fridge, is that right?

This sounds really good too. I love the english cucumbers and wait for them to go on sale as they are $2.50 each here.

I plan on halving mine. I would think the cukes would get mushy quickly.

Wow, I didn't know these type of salads were so common. Mine is very similar. There is also rings of thinly sliced red onion in it in addition to cucumbers.
The dressing is just equal parts mayo and sour cream, lots of dill and a little bit of Beau Monde seasoning (salt, onion powder, celery seed) and white pepper. It is so good I can eat it plain.

I make mine with cucumbers, sour cream and Bragg's Apple Cider vinegar, salt and pepper...I'll have to try some of the other variations! I usually make a big bowl of it and use it within a couple of days....I'm the only one in my house that likes it...

I made this exact recipe today except with Hellmans Mayo and I seriously dont think it will have a chance to get mushy...it is delicious!!!
