Years ago I came across a recipe that had you thicken with flour blended into softened butter. I was astounded back then how easy it was to stir it straight into my recipes, clump-free every time. Been doing it that way ever since. Never thought to do it with xanthan or guar gum though. The salt-shaker dusting method works so well for me for xanthan and guar. But the oil infusion method would work, too, I'm sure.
