Peanut Butter Protein Candy Bars

Peanut Butter Protein Candy Bars
1 T coconut oil
1/3 cup powdered erythritol
2 T (1 oz) crunchy peanut butter
1/3 cup worth of other sweetener (I use 8 drops of sucrlose liquid)
1 heaping scoop whey protein powder
1 T Davincis (I used vanilla)

Put coconut oil and erythritol in a bowl. Nuke until the erythritol melts completely, 2 1/2 minutes in my microwave. Stir to melt crystals completely. Stir in peanut butter and sucralose. Then mix in whey protein isolate. Stir in the Davincis. Pat with a spoon (it's hot) into silcone molds. I use my muffin top molds. Makes 2 muffin top candy bars.

I have been eating these every day for several days. I am losing weight using the entire recipe as one of my 4 meals a day. They are delicious and portable. My whey protein isolate has only 1 carb and 27 grams of protein. So the entire recipe is 5 carbs with 34 grams of protein. Keeps me full for hours. You could make them less sweet. But they taste like a Payday to me just the way they are.

Do you have regular erythritol? Just grind 1/4 cup in your coffee grinder.

I've been making this treat for a couple of months now, (In this thread) but keep tweaking it.

One day I just decided to throw a few ingredients together and see where it brought me. I find it often has a lovely caramel/toffee flavour. Sometimes I like just a wee bit of peanut butter in it, sometimes I like a lot. The same with the coconut oil. I've thought about adding dessicated coconut, chocolate chips or nuts of some sort - but so far I enjoy the smooth texture too much to mess with it!

I use a xylitol/erythritol/liquid stevia blend, and vanilla essence.

I made these today using chocolate protein powder since that was all I had. I rolled then flattened them in to 5 little patties. These are so good and so easy! Problem is,
I have almost eaten the entire batch!
Great quick n easy recipe!!

Question: 2/3 cups sweetener + 1T davincis sounds like a lot of sweetener to that little bit of other ingredients. Is it typed correctly?

Dottie, you could certainly add less. I wanted it to taste like a candy bar, and I like things sweet. Mix it up without the sucralose and see how you like it.

No, I don't think so. My vanilla whey protein isolate is very good tasting, but even if yours isn't, the peanut butter should cover up the taste. All protein powders are different. You may need to change the amount of liquid to accomodate yours. I use just enough liquid to hold the bars together. When they cool, they stay stable without refrigeration, for at least 24 hours. (It might be longer, but I always eat them.) I have been looking for portable meals, and this is my newest favorite. I am currently working on a chocolate version.

I didn't use the extra sweetener, just the 1/3 c., but my chocolate whey protein is sweet. It was plenty sweet and believe me, I like things sweet!

These sound great, I like that they are portable w/o refrigeration.

ETA: how big is your protein powder scoop? Does it list the serving size in grams or oz? The vanilla whey powder I use has a pretty small scoop compared to most. TIA!

one word of warning. I followed directions and nuked in a glass bowl in my microwave--as I removed it, the bowl (which was mw safe) shattered and burned me pretty badly--after cleaning up and treating myself I made it again on the stove top--I think my erythritol took a LONG time to get hot enough to melt--and then was too hot for the glass, so that when I took it out, the cooler air temp shattered the glass--

Thanks for the warning. My erythritol is melting in 2 and 1/2 minutes to 3 minutes. How long did yours take? I use a Corelle pasta bowl with no problems. I am so sorry you got hurt.

I hope that you didn't get burned too badly!
I don't melt the sweetener. I must be weird because I actually like the gritty, crunchy texture of the dry sweetener.
I guess it's because when I was young I remember my dad making peanut butter fudge and it always had that gritty texture from the sugar, since he didn't melt everything together, just mixed it up real quick. But it was so good! These remind me of that....ahhhh memories.

tweaked this recipe for my lowcal/lowcarb WOE--still delish--thanks soobee for the recipe

I used 1/3 c. regular erthritol melted
8 drops sweetzfree
2 Tbs red fat cream cheese
3 Tbs PB2
1 scoop vanilla protein powder
3 squirts of vanilla davincis

blend together and put in mini muffin tray and cool--just delicious!

this is my new favorite recipe! I really have to stop making these!

Anyway, tonight I had some coconut cream concentrate (I bought this just to see what it was)that I wanted to use up, so I warmed it up to liquid consistency, added unflavored whey protein (haven't bought vanilla yet), some coconut extract, some vanilla extract, and the sweetener. This was rather dry so I added just enough water to hold it together to make patties, put them in the frig to firm up. Yummy!
