jlp2009, di you use melted erythritol? Or did the bars stay together without it?

I didn't melt the sweetener (I have a mixture of E, stevia, splenda, and I don't even remember what else I put in it!) and that's probably why I had to add a little water. (I also didn't use any Davinci's) They were too dry without the water.
I didn't add any extra coconut oil, just used that concentrate stuff which is rather oily anyway. I used a really heaping scoop of the protein and a level scoop of the sweetener. Didn't measure the coconut concentrate but it looked like a couple of tablespoons give or take.

YAY- finally a recipe where I can use up my PB DaVinci's that I hate......hahaha I mean I want to get rid of.

Soobee- is your vanilla whey protein powder sweetened? The vanilla I have has sucralose already in it.

Anyway, tonight I had some coconut cream concentrate (I bought this just to see what it was)that I wanted to use up, so I warmed it up to liquid consistency, added unflavored whey protein (haven't bought vanilla yet), some coconut extract, some vanilla extract, and the sweetener. This was rather dry so I added just enough water to hold it together to make patties, put them in the frig to firm up. Yummy!

Ouiz,
Sounds good. I'll give your version a try also.
Hmm I have some CCC in fridge that I do nothing with, this sounds good.

I'm loving these..I made a double batch and got out my mini-muffin tins and then put a little muffin paper in it, and put the candy in the papers, then froze them..popped them out, put them in a plastic bag and put them in the freezer.

I made a double batch day before yesterday and put them in a covered glass bowl on my counter, is there a reason they should be refrigerated? They seem to be fine on the counter so far.......................Ann

3 Tbs PB2
1 scoop vanilla protein powder

blend together and put in mini muffin tray and cool--just delicious!
Got the Nutritional facts on these? Soobee's recipe looks so yummy but at over 200 calories per 1 serving with her recipe making 2 servings it's not doable for me calorie wise. How many did you get for your recipe, also please.

Ann, I keep mine out on the counter for a day. I haven't had them around longer than that, but I don't think that would be a problem.
Beeb, I know the calories are high. I use them as a meal replacement. I have one chocolate and one peanut butter bar everyday. I have done that for a month. I am losing wieght (actually, I'm not trying to lose weight), and I think it may be the coconut oil that is the reason.

I tried the lower cal version leaving out the Davinci's and Sweetzfree but used fat free
cream cheese instead of reduced fat. They taste good but have to be eaten with a spoon. I added a little coconut oil hoping that would firm them up in the frig but it didn't help. I think it was the Fat Free cream cheese that is the issue.

Thank you Soobee, I did a batch with strawberry whey, I was out of vanilla and they did taste like strawberry, day care children loved them, I prefer the peanut butter ones. Good thing, more carbs in the strawberry whey. If you can afford a few more, it's an option to make different flavors..................... Ann

I must have defective E! I kept nuking it and nuking it and it would not melt! Finally I nuked it so long it kind of burned. I will have to try it in a sauce pan on the stove top and see how this works.

Mine didnt nuke either with just the T of Coconut Oil and E, it was very dry. but I nuked it for 2 minutes then added 1 T Monin Syrup and it then dissolved and I added the rest of the ingredients.

What an amazing difference. You are so right, it melted in 30 seconds on the stove top. They are in the fridge now cooling down, can't wait to try one!

Ann,
What did you use in place of peanut butter in your strawberry ones?

I used the peanut butter, didn't realize I was out of vanilla whey till I had already started making them. You couldn't really taste the peanut butter...............Ann

I made these using Palm oil instead of coconut, caramel DaVinci's, 8 unsweetened Guittard cocoa liquor drops (from local candy store) and they are very good . Mine came out like a very stiff fudge. I have been dying for chocolate candy and these really took care of that craving.

Next time I think I'm going to try leaving out the chocolate and some of the peanut butter, use peanut butter DaVincis instead of caramel and then make little patties and dip them in Lauren's peanut butter and palm oil coating recipe.

Thank you Soobee. This is a winner . I am so impressed with the people on this board and the amazing recipes they come up with. I don't seem to have much luck converting recipes or creating them so it's great to come here and find them.

Carolyn, how many did you get from this recipe as mini muffin shapes?

Thanks!

I made mine in a mini muffin tin also and got 12 pieces. They're small but, pretty sweet so one or two satisfies my cravings for something sweet.

It dawned on me last night that I could use Ouizoid's version with cream cheese to make the strawberry or just about any other flavor.

I have some different candy flavors in the pantry. I think I need to experiment.

Made this Saturday night as a treat for my sister and I since she'd made a carrot cake for the non-lc'ers in the family for a cookout. Delicious!!

I made on my stovetop (gas) instead of the micro. The E melted fine without having to whiz it first.

Thanks so much for this!

[QUOTE=Soobee;13608123]Peanut Butter Protein Candy Bars
1 T coconut oil
1/3 cup powdered erythritol
2 T (1 oz) crunchy peanut butter
1/3 cup worth of other sweetener (I use 8 drops of sucrlose liquid)
1 heaping scoop whey protein powder
1 T Davincis (I used vanilla)

I want to try these. Can I use 1/3 cup of Splenda powder?
I was looking at Atkins protein bars today - I don't get it. They're very high in carbs, no?
I'm looking for snacking ideas (that's what drew me to this thread). I'm relatively new at low-carbing, and I've been making up a small dish of cream cheese, peanut butter, and a bit of Splenda for my snack. Getting tired of it, though.
Linda

Yes, you can, but it will add more carbs. The sucralose liquid is 0.

I tried a batch subbing almond butter for the peanut butter. I was not impressed.
I really like almond butter plain, but I haven't liked it in anything that I have tried so far.
Now I am making the original recipe and rolling it in a log. After chilling, it can be sliced really nicely.
