Ii do an individual Zucchini Bread/Cake with the OMM recipe. Have also done this with grated apple, but the carbs go up to 5.9 if you use apple instead of zucchini. It's great with my Lime Cream Cheese Frosting slathered on top:

Individual Zucchini Cake

INGREDIENTS:

1 tsp. melted butter
1 egg
1 tsp. DaVinci vanilla S/F syrup or vanilla extract
1 T. cream
1 oz. (about 3 T.) grated zucchini, squeezed dry
¼ c. flax meal (I use dark)
1 tsp. oat fiber
½ tsp. baking powder
1 pkt. stevia or Splenda
1 pkt. Truvia
1 tsp. cinnamon
Pinch nutmeg

DIRECTIONS: Melt butter in small bowl or medium ramekin. Add egg and beat well. Stir in DaVinci S/F syrup or vanilla. Add cream and grated zucchini and stir all wet ingredients together well. Add flax, baking powder, sweetener cinnamon and nutmeg. Stir again, scraping down sides of bowl. Microwave on HI for about 70 seconds. With a knife tip, loosen and tip out of bowl to cool. Serve with my Lime Frosting recipe.

NUTRITIONAL INFO: Makes 1 serving (I can usually only eat half though)

290 calories
22.6 g fat
12.0 g carbs
9.4 g fiber
3.6 g NET CARBS
12.8 g protein
293 mg sodium

WOW!!! I made this this morning. Only change was I snapped off a piece of 85% choc I had on hand and chopped it up. It was one of the most delicious things I have had in a while. Tasted like a decadent vanilla chocolate chip muffin. Heavenly! I ate it while heading in to work. Thank goodness, or I would have immediately made another one if I was at home!

I am bumping because, while I don't mind adding a touch of almond meal, I really want it to stay flax...almost carbless or close to it save other ingredients...plus I need the poop factor hehehehe

That being said i like the MIM recipe as is, toasted does work, but make them in little bowls so they slice and they are huge and so filing...I use cinnamon whipped cream cheese.

I'd love an easy savory recipe that doesn't require a lot of spices...more like a whole wheat flavor, sine it's nutty anyway...this way hubby can have bread with dinner...please...seriously any simple suggestion for a wheat bread taste?

The sour cream added as stated in earlier posts really helps with a cakelike texture...I fell upon it by accident and then saw it here...it is definately a game changer...who knew.

I want to try this version with the sour cream. I like the original OMM's but they do have a bit of an eggy smell to them IMO. Especially if toasted.

I learn soooo much from you guys!

I made Cream Cheese Clouds

CREAM CHEESE CLOUDS - Linda's Low Carb Menus & Recipes (I made mine with liquid stevia)

Not a fan of the clouds and have a whole bunch left in my freezer. But, I put one in the middle of my OMM and it turned out quite good.

Sometimes I also use frozen blueberries tucked in.
