I used to work in a candy factory and one of the favorites was chocolate covered cream cheese.

For the sweetened ones we never used butter.

For lo-carb ones made with Splenda:

Bars of unsweetened chocolate
(Bakers (1 oz.)Net Carbs: 4
Nestle (1 oz.)Net Carbs: 4
Splenda to taste
Melt these 2 ingredients in a pan on low.

Cream cheesecarbs: 1 oz. -0.75

When chocolate is cool enough, take cut squares of cream cheese and cover them in the melted chocolate. Put on waxed paper to dry.

You'll have to play around with it a bit to desired taste.
